Did you know you can eat lavender? Yes, it is a fragrant flower but also an edible herb. Lavender is one of my favorite herbs to use in the kitchen. I love the floral scent that it brings to the house when I’m making this recipe. In addition to the aroma, it is very versatile in cooking and has so many good health benefits.

Sourcing lavender
You can grow your own lavender in a flowerbed or garden to have on hand. You can also purchase lavender online that is organically sourced. If you are going to be consuming lavender, I strongly recommend making sure it is certified organic or from your own garden. I choose to use the Starwest Botanicals. It is certified organic and sourced from France.

How to make lavender honey syrup
Your going to want to gather your lavender buds, water, sugar of choice and stove top pot. Combine water and lavender into pot. Bring to a boil. Turn down the heat and stir in the sugar and honey letting it dissolve. Let it simmer for 20 minutes uncovered. This will make your whole house smell wonderful. 🙂 Remove from heat and let sit until cool. Once cooled, you will want to strain out the lavender buds using a cheese cloth or fine strainer. Pour contents into glass bottle and keep refrigerated until use.

Ingredients
- 1 c water
- 1 c honey
- 1/2 c coconut sugar
- 1/2 c lavender buds
Instructions
- Bring water and lavender to boil
- Turn down the heat and stir in the honey and sugar until the sugar is dissolved
- Let simmer for 20 minutes
- Remove off heat and let steep for 1 hour
- Using a cheese cloth or fine strainer, strain the lavender buds out
- Pour into bottle or container and keep refrigerated until use
Notes
- This recipe makes 8 oz or 1 cup worth of syrup. I typically add 1 oz to my beverages.
- You can make this recipe not using honey and using just 1 cup of coconut, palm or raw sugar.
- The best lavender buds to use are ones that have not opened or flowered if using fresh from the garden, if not using dried is perfectly fine.
