3 Ingredient Pina Colada Mocktail
Dreaming of a tropical getaway but staying close to home? This creamy Pina Colada Mocktail will have you feeling like your on vacation with sweet pineapple, rich coconut and a frosty, refreshing finish that's perfect for sipping poolside all summer long.

THE BEST PINA COLADA MOCKTAIL FOR SUMMER
As I head into my 9th year of sobriety, I'm still a fan of fruity drinks just minus the alcohol. Summer gatherings, beach vacations, backyard barbecues and relaxing evenings on the porch all feel a little more festive when there's a special drink in hand. This Pina Colada Mocktail has become one of my absolute favorites because it captures everything I love about the original while keeping it alcohol free.
If you've never had a pina colada before, think of it as a tropical vacation in a glass. This mocktail is creamy, icy, sweet and bursting with pineapple flavor. The coconut adds a rich velvety texture while the pineapple juice brings bright, sweetness that tastes incredibly refreshing on a hot day.
Whether you're celebrating sobriety, serving a family friendly drink, hosting a summer party or simply looking for something fun to sip by the pool, this recipe is it! Pair it with my Watermelon Mint Slushie or a glass of Honey Lemonade for a summer drink menu everyone will love.
WHY YOU'LL LOVE THIS MOCKTAIL RECIPE
- Completely alcohol free. It is a mocktail afterall, so everyone from kids to adults can enjoy!

- Ready in minutes. Simply add everything to a blender and let it do the work. No complicated steps or special equipment is needed.
- Perfect for hot weather. The icy, frozen texture is cooling and refreshing during warm summer afternoons.
- Customizable. Add extra fruit for topping, adjust the sweetness or make a large batch for entertaining.
INGREDIENTS
- Pineapple juice: Use fresh, canned or boxed all work well for this recipe.
- Coconut cream: Canned cream is the best. Make sure you don't get confused with coconut milk but use the cream so it is thick.
- Ice: Helps thicken the drink and keep it chilled.
- Toppings: Pineapple ring slice, cherries or sliced lime.

HOW TO MAKE PINA COLADA MOCKTAIL
Step 1: Combine the pineapple juice and coconut cream and blend.

Step 2: Add the ice and blend until smooth.

Step 3: Pour, serve and add your favorite toppings.

EMILY'S TIPS FOR THE BEST MOCKTAIL
- Chill your ingredients first. Cold pineapple juice and even the coconut cream helps create a frostier texture and prevents the ice from melting too quickly.
- Use full fat coconut cream. The full fat version is the best for maximum creaminess.
- Blend in stages. Start with the liquids before adding the ice to help your blender work more efficiently.
- Adjust the thickness and sweetness. Add more ice for a frozen drink or a splash of pineapple juice if you prefer a thinner consistency. For sweetness, add more or less coconut cream.
- Serve immediately. Frozen mocktails are always at the creamiest right after blending.
WHAT TO SERVE WITH A PINA COLADA MOCKTAIL
This drink is perfect as a delightful afternoon treat but it's also great alongside appetizers at the pool like this Creamy Buffalo Chicken Dip with Rotel or this Cowboy Queso Dip with chips.
To continue on with the fruity theme and especially for the kids, this Rainbow Fruit Platter is great with this drink that kids and adults can enjoy.
If your looking to enjoy with a meal, I'd say have them with these Garlic Butter Honey BBQ Chicken Tacos or this Mexican Street Corn Chicken and Rice Bowls to blend savory eats with a sweetened drink.

STORAGE INSTRUCTIONS FOR BIG BATCHES
If your making this Pina Colada mocktail for a party, blend the pineapple juice and coconut cream ahead of time and store in an airtight pitcher in the refrigerator for up to 24 hours.
When ready to serve, give the mixture a good stir and blend it again with fresh ice to restore the frozen texture. If the mixture separates while chilling, that's completely normal just simply stir or shake before blending.
For larger gatherings, you can also freeze the blended mixture in a freezer safe container. Allow it to thaw slightly before re-blending to achieve the perfect slushy consistency.
FAQ'S
