Step 1: Preheat oven to 350 F. Spray and line a 8x8 baking pan with parchment paper. Set aside.
Step 2: In a large bowl, cream the butter, sugar, lemon zest until light and fluffy.

- ¾ cup Bob Red Mill Gluten Free 1:1 baking flour
- ½ cup butter, unsalted, room temperature
- ¾ cup granulated sugar
- 2 eggs
- 2 lemons, for juice and zest
- 1 tbsp lemon juice
- ½ tsp baking powder
- ⅛ tsp salt
Glaze
- ¾ cup powdered sugar
- 1 ½ tbsp lemon juice
Instructions
- Preheat the oven to 350F.
- Spray and line an 8x8 inch square baking pan with parchment paper and set aside.
- In a large bowl, use the paddle attachment or beaters on medium to high and cream together butter, sugar and lemon zest until light and fluffy, approximately 2-3 minutes.
- Add the eggs and lemon juice, and scrap down the bowl and mix until combined.
- Add the flour, baking powder and salt until combined.
- Pour the mixture into your prepared baking pan and spread until evenly in the pan.
- Bake the mixture for 25-30 minutes until done.
- Let the brownies cool for 15 minutes.
Glaze
- Mix together the powdered sugar and lemon juice together then spread on top of the brownies.
- Let the glaze firm up for approximately 30 minutes.
- Cut the brownies into desired pieces and serve!
