Description

These Gluten Free Lemon Brownies are soft, fudgy and bursting with bright citrus flavor, topped with a simple sweet-tart glaze that soaks right into every bite. They're the perfect spring dessert when you want something fresh, vibrant and completely gluten free without sacrificing texture.


Ingredients

Scale
  • 3/4 cup Bob Red Mill Gluten Free 1:1 baking flour
  • 1/2 cup butter, unsalted, room temperature
  • 3/4 cup granulated sugar
  • 2 eggs
  • 2 lemons, for juice and zest
  • 1 tbsp lemon juice
  • 1/2 tsp baking powder
  • 1/8 tsp salt

Glaze

  • 3/4 cup powdered sugar
  • 1 1/2 tbsp lemon juice

Instructions

  1. Preheat the oven to 350F.
  2. Spray and line an 8x8 inch square baking pan with parchment paper and set aside.
  3. In a large bowl, use the paddle attachment or beaters on medium to high and cream together butter, sugar and lemon zest until light and fluffy, approximately 2-3 minutes.
  4. Add the eggs and lemon juice, and scrap down the bowl and mix until combined.
  5. Add the flour, baking powder and salt until combined.
  6. Pour the mixture into your prepared baking pan and spread until evenly in the pan.
  7. Bake the mixture for 25-30 minutes until done.
  8. Let the brownies cool for 15 minutes.

Glaze

  1. Mix together the powdered sugar and lemon juice together then spread on top of the brownies.
  2. Let the glaze firm up for approximately 30 minutes.
  3. Cut the brownies into desired pieces and serve!

Notes

  • Use fresh lemons for the juice and zest.
  • Add the glaze while the brownies are slightly warm.
  • For a fudge like consistency, chill in the fridge for a firmer texture.
  • Storage: Store brownies in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days.
  • Freezing: Store in a freezer safe container for up to 3 months. Thaw at room temperature or overnight in the fridge.
  • Reheating: Warm individual brownies in the microwave for 10-15 second intervals.
