Flourless Cashew Butter Brownies

These flourless cashew brownies are moist, gooey, creamy and make the perfect dessert. Paleo friendly and a vegan option is available.

Raise your hand if you love brownies! They are the perfect bite size dessert for anyone. You can top them with ice cream, drizzle them with chocolate syrup, add sprinkles or chocolate chips. The list goes on and on.

These brownies are perfect with creamy cashew butter drizzled on top. Don’t let the fact that it is flourless turn you off. The cashew butter combined with the applesauce gives it a creamy, gooey texture that will melt in your mouth.

Ingredients You’ll Need

  • Cashew Butter
  • Cacao powder
  • Coconut sugar
  • Applesauce
  • Eggs
  • Ghee
  • Chocolate chips
  • Vanilla extract

How to Make

  1. Pre-heat oven to 350 degrees. Spray a 9 x 9 baking dish with oil and set aside.
  2. Combine all ingredients into a mixing bowl and stir until a batter is formed.
  3. Pour mixture into baking dish and bake in oven for 30-35 minutes.
  4. Take out, let cool, slice, drizzle extra cashew butter on top and enjoy.

Substitutions + Variations

  • Cashew Butter- any nut butter will do or sunflower seed butter if there is a nut allergy. Something for everyone!
  • Eggs- if vegan or egg allergy, just mix 2 tbsp flax seed with water
  • Cacao powder- can be unsweetened or sweetened
  • Coconut sugar- any granulated sugar or brown sugar will do
  • Applesauce- olive oil or avocado oil can be substituted
  • Ghee- melted butter, vegan butter or coconut oil can be used
  • Vanilla extract- you can do butter or almond extract but it will change the taste
  • Chocolate chips- dairy free or regular

Can this recipe be made vegan?

Yes, you would need to sub out the egg for a flax egg. Also, instead of ghee, use a vegan butter or coconut oil in place. For the chocolate chips, stick with a dairy free brand such as EnjoyLife.

Tips for the best brownies

  • Don’t over bake. Watch the clock around the 30 minute mark since every oven is different. You want them to still be gooey if you stick a toothpick in. They will continue to bake a little even after you’ve pulled them from the oven.
  • Let brownies cool before removing from pan. I can’t tell you how many times I’ve removed brownies that were hot only to have them crumble. Even flourless ones break apart. Please wait to remove so they hold together.
  • Drizzle warm cashew butter. This takes it up a notch and is so yummy. You’ll thank me for this last tip!

Storing + Reheating

Refrigerator- seal in an airtight container for up to 5 days.

Freezer- seal in a freezer safe bag for up to 3 months.

Reheating- take out of refrigerator and wrap in paper towel, microwave for 30 seconds to 1 minute or place in 350 degree oven for 2-3 minutes. If taking from freezer, let sit on counter for 30 minutes to unthaw before reheating in microwave or oven.

Ingredients

Scale
  • 2 eggs
  • 1 cup + 1/4 cup cashew butter
  • 1 cup chocolate chips
  • 3/4 cup apple sauce
  • 1/4 cup cacao powder
  • 1/4 cup coconut sugar
  • 2 tbsp ghee
  • 1 tsp vanilla extract

Instructions

  1. Pre-heat oven to 350 degrees. Spray/grease a 9 x 9 baking dish and set aside.
  2. Combine all ingredients into a large mixing bowl. Stir until a batter is formed.
  3. Pour batter into baking dish. Top with additional chocolate chips, if you desire.
  4. Bake in the oven for 30-35 minutes. Be sure to check at the 30 minute mark as each oven is different.
  5. Take out, let cool and drizzle warm cashew butter on top. Enjoy!

Notes

  • You want the brownies to still be gooey when you take them out. They will continue to bake so no need to worry. To check, just use a toothpick or gently cut into one.
