    This creamy paleo vanilla honey ice cream will rock your world. Enjoy this treat guilt free on a hot summers day.

    As the weather gets warmer, we go through alot of ice cream in our house. I truly think my husband could eat his weight in ice cream if he let himself. He enjoys this ice cream on top of my Gluten Free Blueberry Crumble. This paleo vanilla honey ice cream is easy to whip up and only has 5 ingredients. All you need is a blender and a freezer. You can actually make this ice cream with or without an ice cream maker.

    Both my children love this ice cream and the fact that we can easily make it at home together is just perfect on a hot afternoon. It makes a wonderful treat and goes great with our Flourless Cashew Butter Brownies and the Easy No Bake Chocolate Chip Bites.

    This creamy delight is so delicious you’ll ditch the store brands and won’t even realize that it’s dairy free.

    Ingredients you’ll need

    • Full fat coconut milk (canned)- this is a must! The coconut milk must be canned and full fat in order for the ice cream not to be runny.
    • Honey- the sweetener that is going to make this ice cream so good. Make sure to use a lighter yellow honey such as clover so it will blend well with the ice cream.
    • Vanilla Extract- adds vanilla flavor to the ice cream.
    • Arrowroot powder- a gluten free thickening agent that holds the mixture together.
    • Salt- helps with freezing.
    Ingredients for paleo vanilla honey ice cream

    How to Make (Blender + Freezer)

    1. Place a freezer safe container in the freezer for 1 hour prior to use.
    2. Place all ingredients in blender.
    3. Blend until consistency is liquid smooth.
    4. Pour into container and let sit in freezer.
    5. Stir contents in container every 30 minutes for 3-4 hours.
    6. Take out then sit on the counter for 10 minutes to soften up before serving.

    How to Make (Ice Cream Maker)

    1. Place ice cream canister into freezer 1 hour prior to making the ice cream.
    2. Add the coconut milk, honey, arrowroot powder, vanilla extract and salt to blender. Pulse to liquid smooth consistency.
    3. Transfer the mixture to the ice cream canister.
    4. Follow the instructions on your ice cream maker. Each ice cream maker is individual so be sure to follow the instructions for your specific machine.
    5. Transfer mixture to a freezer safe container and let freezer for up to 4 hours.
    6. Take out then sit on the counter for 10 minutes to soften up before serving.

    Best type of honey to use

    The best type of honey to use is clover honey. This honey is going to be lighter in color so blends well with the full fat coconut milk. The taste is that of “sweet syrup”. It is the perfect honey to use in ice cream.

    What is arrowroot powder? What does it do?

    Arrowroot powder is a starch that is used as a thickening agent. It adds texture and structure in cooking and baking. In ice cream, it will help hold everything together and thicken it up to be nice and creamy.

    Benefits of homemade paleo ice cream

    • Dairy-free- no need to worry about anyone with a dairy allergy. Dairy can be highly inflammatory for some people and the ingredients in paleo ice cream are 100 % anti-inflammatory.
    • Less chemicals- pick up a box of store bought ice cream and try to read all the ingredients. Yuck! Many are lab made with a ton of additives that are not good nor healthy for the body. Homemade paleo ice cream is just 5 simple, healthy ingredients.
    • Easy and fun- yes, I said fun. I make this version with my kiddos all the time. They love it! Whether your using an ice cream maker or just blending then freezing, it is super easy to make.

    Ingredients

    Scale
    • 2 cans full fat coconut milk
    • 1/2 cup honey
    • 2 tbsp arrowroot powder
    • 1 tsp vanilla extract
    • 1 tsp salt

    Instructions

    Blend + Freeze Method

    1. Place a freezer safe container in the freezer for 1 hour prior to use.
    2. Add the coconut milk, honey, arrowroot powder, vanilla extract and salt to blender. Pulse until you reach a smooth liquid consistency.
    3. Pour into cold freezer safe container and let sit in the freezer for up to 4 hours.
    4. Take out of freezer every 30 minutes and stir contents, then place back in freezer.
    5. When ready to serve, sit container on the counter for 10 minutes to soften up before serving.

    Ice Cream Maker

    1. Place ice cream canister in freezer 1 hour prior to making the ice cream.
    2. Add the coconut milk, honey, arrowroot powder, vanilla extract and salt to blender. Pulse until you reach a smooth liquid consistency.
    3. Transfer the mixture to the ice cream canister.
    4. Follow the instructions on your ice cream maker.
    5. Transfer the mixture to a freezer container and let freeze up to 4 hours.

    Notes

    • When pulsing in the blender, make sure to blend well any coconut cream that may form on the surface.
    • For best practice, the freezer container should be in the freezer no less than 1 hour prior to using. You want to make sure your container is nice and frozen for the mixture to go in.
