HOMEMADE CHOCOLATE PEANUT BUTTER CUPS

These homemade chocolate peanut butter cups are delicious and easy to make with clean ingredients from your pantry.

My absolute favorite food groups- chocolate and peanut butter! Oh….I mean food combinations. πŸ™‚ But they may as well be food groups in my book. Who doesn’t love these two together? The salty peanut butter with the sweet chocolate hits the spot every time. If you can’t tell already, I’m a huge fan of Reese’s peanut butter cups. I decided to do a homemade remake of a nostalgic childhood treat. These chocolate peanut butter cups are made with just three simple ingredients that you most likely have in your pantry now. They come together super easy and are sure to satisfy every chocolate/peanut butter lovers craving.

How to make chocolate peanut butter cups?

First, you will line a muffin tray with twelve paper or silicon cups. I use these for my baking. Place a pan on stove top then pour one package of chocolate chips into pan. Enjoy Life is my preferred chocolate chips because they are dairy and gluten free. Scoop coconut oil into pan over top chocolates. Then, warm up chocolate chips and coconut oil on medium heat stirring every few seconds so the chocolate doesn’t burn. The consistency of the chocolate chips and coconut oil should dissolve together. Pour the chocolate mixture into the baking cups filling 1/3 of each cup. Place pan in freezer for 15 minutes. Take out once chocolate is frozen and pour salted peanut butter over top each filling 1/3 of each cup. Place pan back in freezer for 15 minutes. Now, take second bag of chocolate chips and coconut oil and repeat process like the first layer. Take cups out of freezer to finish final chocolate layer. Place back in the freezer for 15 minutes. They are now ready and can be enjoyed immediately. This homemade version of chocolate peanut butter cups make a perfect sweet treat or great gift idea for any holiday.

Can substitutions be used in this recipe?

Yes, substitutes can be used. Instead of coconut oil, you can use ghee if you are dairy free or butter, if tolerated. For this recipe, I used dark chocolate chips but you can use milk chocolate or semi-sweet chocolate chips. If you need to make them peanut free, almond, cashew or sunflower seed butter can be used. Therefore, the consistency and texture will be the same using these alternatives.

How can they be stored?

Chocolate peanut butter cups can be stored in the freezer up to 3 months in an airtight bag.

Description

A homemade version of a classic treat. These 3-ingredient chocolate peanut butter cups make the perfect easy, simple snack or dessert.


Ingredients

Scale

2–10oz bags of chocolate chips (semi-sweet, milk chocolate or dark chocolate)

1 cup salted peanut butter

2 tbsp coconut oil


Instructions

  1. Line muffin pan with 12 paper or silicon cups
  2. Place one 10oz package of the chocolate chips and 1 tbsp of coconut oil in stove top pan to melt mixture on medium heat
  3. Continue stirring the mixture until they combine
  4. Pour mixture 1/3 of the way into each cup
  5. Place in freezer for 15 minutes
  6. Take out of freezer, then pour peanut butter 1/3 of the way into the cup on top of the frozen chocolate
  7. Place in freezer for 15 minutes
  8. Repeat steps #2 and #3
  9. Take out of freezer and top the rest of the cups with the chocolate/coconut oil mixture
  10. Place in freezer for 15 minutes
  11. Take out of freezer and enjoy!

Notes

  • You can use any kind of chocolate- semi-sweet, milk or dark. If you want these to be dairy and gluten free Enjoy Life chocolate is recommended.
  • You can substitute coconut oil for ghee or butter.
  • You can substitute peanut butter for almond, cashew or sunflower seed butter.
