HOMEMADE CHOCOLATE PEANUT BUTTER CUPS

Description

A homemade version of a classic treat. These 3-ingredient chocolate peanut butter cups make the perfect easy, simple snack or dessert.


Ingredients

Scale

210oz bags of chocolate chips (semi-sweet, milk chocolate or dark chocolate)

1 cup salted peanut butter

2 tbsp coconut oil


Instructions

  1. Line muffin pan with 12 paper or silicon cups
  2. Place one 10oz package of the chocolate chips and 1 tbsp of coconut oil in stove top pan to melt mixture on medium heat
  3. Continue stirring the mixture until they combine
  4. Pour mixture 1/3 of the way into each cup
  5. Place in freezer for 15 minutes
  6. Take out of freezer, then pour peanut butter 1/3 of the way into the cup on top of the frozen chocolate
  7. Place in freezer for 15 minutes
  8. Repeat steps #2 and #3
  9. Take out of freezer and top the rest of the cups with the chocolate/coconut oil mixture
  10. Place in freezer for 15 minutes
  11. Take out of freezer and enjoy!

Notes

  • You can use any kind of chocolate- semi-sweet, milk or dark. If you want these to be dairy and gluten free Enjoy Life chocolate is recommended.
  • You can substitute coconut oil for ghee or butter.
  • You can substitute peanut butter for almond, cashew or sunflower seed butter.
