Ingredients
- 1 tbsp olive oil
- 1 medium onion, peeled and chopped
- 2-3 large carrots, peeled and chopped
- 1 rib celery, chopped
- 3 garlic cloves, peeled and minced
- 2 lbs boneless skinless chicken thighs
- 64 oz (2 qts) low sodium chicken broth
- 2 cups gluten free egg noodles
- ¼ cup fresh parsley, chopped
- Salt and black pepper
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onions and cook for 2 minutes.
- To the pot add the carrots, celery and garlic. Cook the mixture together with the onions for 5 minutes, stirring often.
- Add the chicken thighs and chicken broth to the pot.
