Looking for something other than chicken for dinner? I feel ya! When I came up with this recipe I was in a bit of a food rut. I wanted something different and exciting. Spicy yet savory. Quick and easy. Minimal prep and little clean up. Ta da! The Whole 30 Italian Sausage and vegetable sheet pan is the perfect meal for those busy nights or a meal to enjoy if you want to spice things up a bit. The italian sausage is savory and the vegetables with the added seasonings make an excellent spicy match up. You can tailor the spices to your level of preference or whatever your household enjoys. I’m sure this sheet pan meal will be loved by all even those not doing a Whole 30.
What ingredients to use
- Italian Sausage
- Green Pepper
- Red Pepper
- Orange Pepper
- Onion
- Russet Potatoes- can sub for yukon gold or sweet potatoes
- Avocado Oil- can sub out with olive oil
- Cumin powder
- Garlic Powder
- Cayenne Pepper (optional)
- Black Pepper
- Salt
How to Make
Pre-heat the oven to 375 degrees. Line a 9 x 13 baking sheet with parchment paper.
Prep all vegetables by cutting the peppers and onions into 1 inch links. The potatoes can be cut into 1 inch squares. so that they cook evenly in the oven. For the sausage, cut into 2 inch long pieces.
Assemble the meat and vegetables on the baking sheet. Sprinkle the spices over top, then drizzle the avocado oil.
Place in the oven for 20 minutes. Take out, let cool and serve!

What type of sausage should I use?
If you are paleo or doing a Whole 30, I’d recommend Pederson’s uncured no sugar added old world kielbasa or Pederson’s no sugar added uncured kielbasa. These have no added sugar, no fillers and no nitrates. If you are not concerned with the above, regular kielbasa will work fine. You just want to make sure you read the labels for additives you might not want.
What to serve with
I love eating this meal with my cilantro-lime cauliflower rice. I place everything on top of the “rice” and mix it in. You can also add everything to a lettuce wrap and enjoy that extra crunch. Not doing a Whole 30, enjoy with regular rice.
Meal Prep + Freezer Friendly
This is an excellent meal prep option for a busy weeknight. Just 10 minutes to prep the vegetables. Place them in a bag along with the sausage when ready just place on tray to heat up.
For freezing, place in an airtight freezer bag and place in freezer for up to 2 months.
For refrigerating leftovers or meal prep lunches, store in airtight containers up to 4 days. Re-heat in the oven at 375 degrees until warm.

- 14 oz Italian Sausage
- 1 green pepper
- 1 red pepper
- 1 orange pepper
- 1 onion
- 2 russet potatoes
- 2 tbsp avocado oil
- 1 tbsp cumin
- 1 tbsp garlic powder
- 1 tsp cayenne pepper (optional)
- 1 tsp black pepper
- 1 tsp salt
Instructions
- Pre-heat oven to 375 degrees.
- Prep cookie sheet with parchment paper.
- Prep vegetables cutting peppers and onions into 1 inch links. Cut the potatoes into 1 inch squares. Cut sausage into 2 inch long pieces.
- Assemble meat and vegetables on cookie sheet and sprinkle spices and drizzle oil over top.
- Bake in oven for 20 minutes.
- Take out, let cool and serve over cauliflower rice, rice, lettuce wraps etc.
Notes
- If you don’t have russet potatoes, you can use any kind of potatoes you like. Just make sure to cut them into 1 inch cubes so they cook evenly with the vegetables and sausage.
- You can usually find the peppers in a 3 pack of green, red and orange. If not available, use whatever color peppers.
