    Tomato, Cucumber, and Avocado Salad with Feta Cheese

    Tomatoes, cucumbers and avocados, oh my! This simple salad is sure to be refreshing and delicious especially during the summertime or any time of year.

    Our summer garden is bursting with tomatoes and cucumbers. While we can most of the tomatoes into sauce and turn the cucumbers into dill pickles, I do leave some aside for this salad.

    It is the perfect salad to share with friends or enjoy with a meal. Sprinkle a little feta cheese over top and add some balsamic dressing and you have an excellent light summer salad. This balsamic dressing has just the right flavor of sweetness to blend nicely with the fresh vegetables and fruit.

    Ingredients you will need

    • Tomatoes
    • Cucumbers
    • Avocado
    • Feta cheese
    • Extra virgin olive oil
    • Balsamic vinegar
    • Garlic powder
    • Salt
    Ingredients for salad- 5 tomatoes on a vine, 1 avocado cut open, 2 cucumbers, bowl of feta cheese and bowl of balsamic dressing

    How to make

    1. Chop vegetables up, then place in large mixing bowl. Crumble feta cheese over top.
    2. Combine ingredients to make dressing.
    3. Pour dressing over salad, then toss to combine.

    What can I serve with this salad?

    • Chicken
    • Steak
    • Pork BBQ
    • Buffalo Wings
    • Sandwiches
    • Wraps

    Add in ideas for the salad

    • Nuts
    • Cranberries
    • Blueberries
    • Raisins
    • Red onions

    Can you prep ahead of time?

    Yes, you can chop up all the vegetables/fruit and top with the cheese. You can prep the dressing ahead of time as well. I would wait to add the dressing until ready to serve.

    Best tomatoes to use for this salad

    Roma tomatoes are going to be the best. They taste wonderful and are easily sourced. You can find them in any store. You could also use beef steak or even cherry tomatoes for this salad too.

    Storage

    • Refrigerator– place in a glass or storage safe container for up to 2 days. The avocadoes may get a little brown from oxidation but the salad still should be good. Anything after 2 days, it will get soggy.
    • Freezer– I’ve never frozen this salad before but don’t think it would be good frozen since tomatoes and cucumbers typically hold water and can become rubbery after freezing.

    Ingredients

    Scale

    For the salad:

    • 4–5 medium size tomatoes (diced)
    • 2 cucumbers (diced)
    • 1 avocado (diced)
    • 2/3 cup feta cheese

    For the dressing:

    • 3/4 cup extra virgin olive oil
    • 1/4 cup balsamic vinegar
    • 1 tsp garlic powder
    • 1/2 tsp salt

    Instructions

    1.  Chop all vegetables up and place in large mixing bowl.
    2. Sprinkle cheese over top of vegetables.
    3. To prepare the dressing, combine all dressing ingredients and mix together.
    4. Pour dressing over salad and toss.

    • To make this dairy free, use any type of dairy free cheese that crumbles over top.
