Spicy Shrimp and Guacamole Bites

Appetizer, Game Day or Snack Treat

Are you ready for an appetizer that will blow your guests away? These spicy shrimp and guacamole bites are so addictive that they will surely be coming back for more. With the big game coming up soon these are perfect to enjoy while eating these Whole 30 buffalo wings. Also, looking for a healthy snack option that checks all the boxes to include a carb, protein and fat? Look no more because these spicy shrimp and guacamole bites have you covered.

How to Make

Pre-heat oven to 425 degrees. Line a cookie sheet with parchment paper then coat with avocado oil.

Slice sweet potatoes into 1/4 in thick slices and place on cookie sheet. Using a brush, coat the top of the slices in avocado oil. Bake in oven for 10 minutes. Slide sheet out and with tongs flip the sweet potatoes over. Place back in the oven for an additional 10 minutes.

For preparing the shrimp, make sure the shrimp is already peeled and de-veined. Place in bowl with seasonings and mix together. In a medium skillet, add avocado oil and heat pan. Place shrimp in pan and cook through turning the shrimp over every few minutes.

For preparing the guacamole, this recipe gives a great step by step tutorial to make. You can also use store bought.

Now it’s time to put the bites together. Place a tablespoon of guacamole on each sweet potatoes bite. Then place shrimp on top. Serve and enjoy!

Tips for Cooking Shrimp

  • Make sure to de-vein all shrimp. You can also buy shrimp already de-veined.
  • Saute on high heat. This gives them the best texture.
  • Pay attention to the top part of the shrimp as it is the thickest part. The outside will cook first but when the top turns opaque then the shrimp is cooked.
  • Remove the shrimp from the hot pan immediately so they don’t continue to cook.

What Can I Serve With?

For a holiday get-together, birthday party or game day celebration these Whole 30 Buffalo Wings and Buffalo Chicken Dip with Rotel’s would be great appetizers that I’m sure guests will enjoy snacking on.

Ingredients

Scale
  • 2 sweet potatoes
  • 2 cups guacamole
  • 1/4 cup avocado oil + 2 tbsp for shrimp
  • 1 lb shrimp, peeled and devained
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp cayenne pepper

Instructions

  1. Pre-heat oven to 425 degrees.
  2. Line a cookie sheet with parchment paper and coat with avocado oil.
  3. Slice sweet potatoes into 1/4 inch thick slices, place on sheet and using a brush avocado oil overtop.
  4. Bake for 10 minutes.
  5. For the shrimp, place in a bowl and add the spices. In a medium skillet, add avocado oil and heat pan. Place shrimp in pan and cook turning them over every few minutes until done.
  6. Take cookie sheet out of the oven and using tongs flip the slices over. Place back in oven and cook for 10 minutes.
  7. For the guacamole, use this recipe of a great homemade guacamole or store bought.
  8. Take sweet potatoes out of the oven.
  9. Begin assembling them placing a tablespoon of guacamole on top of the sweet potato slice then top with shrimp.
