Description
This slow cooker creamy sausage and potato soup is perfect on a cold winters day. The blend of sausage, potatoes and creamy corn in a slow cooker makes it an excellent filling dish to have on the dinner table.
Ingredients

- 1 lb ground pork sausage
- 1 cup onions (chopped)
- 4-5 cups yukon gold potatoes (cubed)
- 1 (12oz) can of evaporated milk
- 1 (150z) can creamed style corn
- 1 (15oz) can of southwestern style corn (with poblano and bell peppers)
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Dice potatoes into 1 inch cubes.
- Over medium heat, brown the pork sausage with the onions until the meat is no longer pink and onions are translucent.
- Drain and add to the slow cooker.
- Add in the rest of the ingredients, stir and cover.
- Cook on low 6-8 hours until the potatoes are tender (or on high 3-4 hours).
- Serve hot with additional salt, pepper, crackers, chips or toppings of choice.
