I really don’t know what took me so long to get this recipe on the blog. It has been a family favorite for years. It is by far one of my top 5 go to meals. Ironically, as I’m writing this it is in the slow cooker now. Perfect timing! The ingredients in here are simple and easy to come by making this meal so versatile. All ingredients are paleo and Whole 30 compliant (check labels on the salsa) so packed with protein, fats and carbs. This slow cooker chicken with vegetables will become a hardy staple in your family’s meal rotation. Since it is all done in the slow cooker, you can throw everything in and forget about it. However, the smells will full your house.
Ingredients you’ll need
- Chicken Thighs
- Sweet Potatoes
- Green Beans
- Salsa

How to Make
Peel and dice sweet potatoes into 1 inch cubes.
Place frozen chicken thighs on the bottom of the crockpot. You do not need to place any water into the slow cooker.
Begin layering the other ingredients on top of the chicken- sweet potatoes, green beans then top with salsa.
Cover with lid and place on high for 4 hours. You could place on low for 6-8 hours.

Substitutions + Variations
- Chicken- this recipe works well with chicken breast however, the thighs add to the juiciness of the dish.
- Sweet Potatoes- butternut squash can be used in place of sweet potatoes. They both are similar in texture and in taste. You can also use white or yukon gold potatoes but just note the flavor will change.
- Salsa- salsa’s come in ranges from mild, medium and hot. You decide based on your preference (family’s preference) how spicy you want it to be.
- Green Beans- no substitutions, however you can use fresh, frozen or canned.
Tips for making this the best slow cooker recipe
- Use chicken thighs. I know you can use breasts but the juice from the thighs will add to the overall flavors.
- No water needs to be added to the slow cooker.
- Check your ingredients in the salsa if you are concerned about added sugars. Unless homemade alot of salsa’s are notorious with adding sugar.
- It is best placed on a high setting for 4-5 hours.

- 2 medium sweet potatoes

Instructions

- Do not mix the ingredients in the slow cooker. The juices will blend together.
- It can be cooked on high 4-5 hours or low 6-8 hours.
- Chicken breast can be used in place of chicken thighs but the thighs will warrant a juicier dish.
