I absolutely LOVE guacamole. I mean, who doesn’t? I can top anything with a little guacamole. It easily became one of my favorite foods thanks to living in Texas. Avocados can be easily found in every grocery store and along many roadside stands. Guacamole and chips are offered at many restaurants as an appetizer and can be found at any party. I learned it makes a great topping to anything ranging from eggs at breakfast, taco salads, chicken and steak. Since I have tried several different versions of guacamole, I can tell you that everyone makes it a little different and each version has it’s own distinct flavor. In the southwest, it is typically a bit spicy while back east it is much more milder. This version is going to be a bit spicy with the added jalapeno but not too over powering for a get together or enjoying with your favorite chips and margarita.

Ripe avocados for the best guacamole
This is the secret key to making the best guacamole that is going to taste the freshest no matter what is added to it- ripe avocados. You must use slightly ripe avocados or the texture will be too mushy and the taste a bit off. First, grab an avocado that has the stem attached. If it doesn’t still have it attached, it is more likely to have brown spots on the inside. Squeeze the avocado, it should be firm but have a slight give to it. If you can’t find slightly ripe avocados, you can buy ones that are firm and leave them on the counter for a few days until you can do the test above on them. If you are purchasing slightly ripe avocados but you aren’t going to make guacamole right away, you can store them in your frig to slow down the process.
How to make guacamole
You don’t need to go out to eat to make the best guacamole. You can do it at home! Authentic guacamole contains real and the most fresh ingredients. Unfortunately, a lot of store bought guacamole have fillers and extras added to preserve them. No sour cream or mayo added to this one (yes, I have seen brands with that as an ingredient to it). First, I start out prepping my ingredients that I am going to use. For this recipe, that would be dicing tomatoes, red onions, a jalapeno pepper and chopping up the garlic and cilantro. Next, slice the avocado in half removing the pit and skin. Scoop into bowl and mash to likeness. Combine tomatoes, onions, pepper, cilantro, garlic and salt. Mix together and squeeze lime juice on top.

Storing guacamole
The best way I have found to store guacamole is to make sure it is in a sealed container with plastic wrap tightly over the guacamole. This needs to be firmly over the contents so that no air can get in. This will help slow down the oxidation process which is what makes it turn brown. You can also add a bit more lime juice to it to help slow down that process as well.

Ingredients
- 6 ripe avocados
- 2 cloves garlic, finely chopped
- 1/2 c tomatoes, diced
- 1/2 c red onions, diced
- 1 jalapeno, seeds removed, finely chopped (optional)
- 1 tbsp cilantro, finely chopped
- 1 lime (juiced)
- 1 tsp salt
Instructions
- Finely chop the garlic and cilantro. De-seed and chop the jalapeno
- Dice the tomatoes and red onions
- Cut avocados in half, remove pit and skin then transfer to bowl
- Mash avocados up to liking
- Combine with the mashed avocados the tomatoes, red onions, jalapeno, garlic, cilantro and salt
- Stir together until all mixed up
- Top with lime juice and serve!
Notes
- If you don’t want too spicy, leave out the jalapeno.
- Sprinkle some extra cilantro on top for added flavor and presentation.
