SAUSAGE, POTATO AND VEGGIE SHEET PAN MEAL

An all in one supper that’s great for those busy days. This Whole 30 version of a sausage, potato and veggie sheet pan meal is sure to be a family weeknight favorite.

I’m a fan of fast and easy prep meals. Sheet pan meals to the rescue. Who doesn’t love a sheet pan meal? I mean, you just put the items on a pan, put it in the oven and voila it is ready in minutes. Sheet pan meals offer you the simplicity to feed your family well while saving time. Meal prep is minimal and the ingredients are typically fresh meat and veggies. This one happens to be Whole 30 so if you are doing one add this to your round. If not, no biggie, this sheet pan meal is made up of clean, real food ingredients that I’m sure you’ll love.

What do I need to make this meal?

For this version of the sausage, potato and veggie sheet pan you will need:

  • Chicken apple sausage (I love Aidells)
  • Broccoli florets
  • Carrots
  • Onion
  • Potato
  • Avocado Oil
  • Salt and Pepper (to taste)

What kind of sausage is best used?

You could use whatever sausage you want with this meal. If you are doing Whole 30, make sure you check the ingredients to make sure they are free of nitrates and added sugar. I prefer Aidell’s Chicken Apple Sausage as I think the flavors blend well with the other ingredients. It is also one of the easiest to find around town. I get mine from Walmart. Peterson’s and Bilinski’s also make great sausages that are whole 30 compliant and would pair well with these ingredients.

Can I use olive oil instead of avocado oil?

You can but I prefer using avocado oil when bake anything in the oven because it’s smoke point is higher. Avocado oil can be heated up to 520 degrees whereas, olive oil is only 350 degrees.

Can I prep ahead?

Of course, you can prep all the ingredients ahead of time. The sausage and veggies can be chopped up and kept in the refrigerator in an air tight sealed container. All you have to do is scatter them on the pan and then pop them in the oven when ready.

Description

Ingredients

Scale
  • 1 pkg chicken apple sausage (sliced)
  • 2 c broccoli florets
  • 1 medium onion (sliced)
  • 1 medium potato (diced)
  • 3 carrots (chopped)
  • 1/4 c avocado oil
  • salt and pepper to taste

Instructions

  1. Pre-heat oven to 425 degrees.
  2. Line an oven tray with parchment paper.
  3. Chop, dice and slice all meat and veggies.
  4. Place all ingredients on tray. 
  5. Drizzle overtop all ingredients the avocado oil.
  6. Bake for 25-30 minutes.
  7. Take out and let cool, then serve.

Notes

  • Make sure to chop the potatoes into smaller squares so that they will cook evenly with the other vegetables.
  • For whole 30, make sure to check the ingredients on the sausage to avoid nitrates and added sugar.
