INGREDIENTS YOU NEED
- Breakfast sausage: I'm using 1 lb of breakfast sausage and you can use any type-turkey, pork etc.
- Cream cheese: Use full fat and softened cream cheese for easier use.
- Can of Rotel: You can use with or without green chilis. I use the mild version to keep the heat minimal.
- Gluten free bisquick: This will bind and keep the balls together.

VARIATIONS
Here are some ways to change things up a bit and customize these sausage balls to be your own.
- Extra cheesy: Add an additional ½ cup shredded cheese.
- Spicy: Use hot sausage and Rotel with green chiles to kick up the heat.
- Low carb: Skip the gluten free bisquick and use almond flour.
- Southwest style: Add cumin and smoked paprika for extra flavor.
- Mini sausage balls: Makes smaller bites for party platters or like this charcuterie board.
EMILY'S TIPS
- Drain the Rotel extremely well. The excess liquid can make the mixture too soft and greasy.
- Use room temperature cream cheese. This will help it incorporate and blend smoothly with the sausage.
- Mix by hand. Using the hands ensures everything is evenly combined.
- Use a cookie scoop. This allows even baking and uniform size.
- Bake until golden, not pale. The browning adds tons of flavor.
SERVING SUGGESTIONS
Serve these gluten free sausage balls warm with toothpicks for easy grabbing. They are perfect alongside dips like this Cowboy Queso Dip or this Buffalo Chicken Dip with Rotel and pair well with appetizers such as chips and guacamole or sliders.

STORAGE AND REHEATING
