Description
This paleo friendly shepherd's pie is the perfect comfort food on a winter day. Topped with creamy sweet potatoes, grab a bowl and curl up by the fire.
Ingredients

- 1 lb ground beef
- 2 medium sweet potatoes
- 2 medium carrots
- 1 cup mushrooms
- 1 cup green beans
- 1/4 cup water
- 1/2 onion
- 4 oz tomato paste
- 1 tbsp coconut oil
- 1 tbsp ghee
- 1/2 tsp rosemary
- 1/2 tsp black pepper
- 1/2 tsp chili powder
Instructions
- Pre-heat oven to 375 degrees.
- For sweet potatoes- peel then place in a sauce pan with water on medium heat.
- For vegetables- dice up the mushrooms, carrots and onions.
- In a skillet on medium heat, melt coconut oil then add in ground beef and vegetables.
- Cook the meat until browned and vegetables are soft. Then add in water, tomato paste and all seasonings.
- Transfer the meat and vegetables into a 9 x 9 pie pan.
- For the sweet potatoes- after they are softened, drain out excess water, add ghee and begin mashing until the mixture is creamy.
- Add creamy sweet potatoes to the top of the pie and bake in oven for 10-15 minutes.
- Take out of oven, let cool and serve.
