    NO BAKE PUMPKIN SPICE HONEY BITES

    Healthy with a touch of sweet, these no bake pumpkin spice honey bites are the perfect fall snack treat.

    Ahh….welcome to fall! The cooler weather, changing leaves, football, hayrides, pumpkin patches and all things pumpkin spice. I was looking to create a sweet yet wholesome fall snack and these no bake pumpkin spice honey bites satisfy the craving. They come together easily with just 4 ingredients. Did I mention they are no bake too? Which means easy clean up and no mess. They make the perfect after school snack, dessert or on the go treat. My son loves helping me make a batch to enjoy throughout the week. We use Bob Red Mills gluten free old fashioned oats. They are a wonderful gluten free option to add into your rotation.

    INGREDIENTS NEEDED TO MAKE

    You will need the following:

    • Old Fashioned Oats
    • Canned Pumpkin
    • Honey
    • Pumpkin Spice Blend

    HOW TO MAKE IT ALL COME TOGETHER

    Prep sheet pan with parchment paper or silicone mat and set aside. Place all ingredients into a bowl. Mix together until all combine well. Roll into one inch thick balls. Place on cookie sheet. Place in freezer up to 3 hours to harden. Take out and enjoy!

    WHAT TYPE OF OATS WORK BEST- OLD FASHIONED OATS OR QUICK OATS?

    I have used old fashioned oats for this recipe and really like the texture. Even after being in the freezer the balls are chewy but still soft enough they don’t have to be thawed out. You can use quick oats but the texture will be more softer and mushier verses if old fashioned oats are used.

    HOW TO MAKE A PUMPKIN SPICE BLEND?

    If you don’t have an already made store bought pumpkin spice blend, no fear. You can simply make your own. All you need is 1/4 tsp of the following: cinnamon, clove, ginger and nutmeg.

    BENEFITS OF EATING PUMPKIN

    I could truly eat these pumpkin spice honey bites all year long. I love pumpkin!!!! It is one of my favorite fruits. There are many benefits to consuming pumpkin. First, it is very high in beta carotene which converts to vitamin A. Beta carotene is a wonderful antioxidant that can help reduce inflammation. It is also known that vitamin A is correlated with good eye health and strengthened eye sight. It is also great for the skin as it helps repair on a cellular level. Pumpkin is also a great source of vitamins C, E, and K. The pumpkin fiber contains calcium, magnesium, iron, phosphorus, potassium and zinc. These fibers help the digestive system remove waste more effectively leading to overall strengthening of the immune system.

    HOW TO STORE?

    You can place in a ziplock freezer bag or glass container in your freezer for up to 3 months.

    Description

    This gluten free fall snack will be a favorite for everyone in the family. Packed with wholesome nutrients it’s delicious and healthy.


    Ingredients

    Scale
    • 1 1/2 cup old fashioned oats
    • 3/4 cup pumpkin puree
    • 1/4 cup honey
    • 1 tsp pumpkin spice

    Instructions

    1.  Prep cookie sheet with parchment paper or silicone mat, then set aside
    2.  Place all ingredients into bowl and mix together
    3.  Roll into one inch thick balls
    4.  Place individually on cookie sheet
    5.  Put in freezer for up to 3 hours to harden
