INGREDIENTS YOU NEED
- Graham cracker crumbs: You will need about 9 graham cracker sheets crumbed up for the no bake crust. This can be done using a blender or food processor.
- Unsalted butter: Binds the crust and adds rich, buttery flavor.
- Vanilla instant pudding: Helps the filling thicken and set with a smooth, creamy texture.
- Whole milk: I recommend using whole milk for richness and a silky filling but a dairy free milk can be used too.
- Eggnog: Infuses the pie with classic holiday flavor and warm seasonal spices. You can use a dairy free eggnog too.
- Ground nutmeg: Enhances the eggnog flavor with fragrant cozy spices and a little is needed for garnish.
- Rum extract: Adds a subtle festive kick without actual alcohol. You can use almond extract.
- Cool whip: For the topping.
- Whole star anise: Optional decoration.

HOW TO MAKE NO BAKE EGGNOG PIE
Step 1: Bring graham cracker crumbs and melted butter together and place in pan. Place in freezer until ready to fill.

Step 2: Combine pudding mix, eggnog, milk, rum extract and nutmeg and beat ingredients until combined.

Step 3: Pour pudding filling on top of pie crust and place in fridge to set, minimum 4 hours.

Step 4: Using a frosting bag, place dollops of cool whip around the edges of the pie and sprinkle with additional nutmeg.

EMILY'S TIPS
- Use full fat eggnog for the richest texture and best set. You can use any type of milk even dairy free ones but full fat yields the greatest results.
- Use a springform pan for the pie. It allows the pie to hold shape better. If you would like to use a regular pie pan, that's fine but it might not come out as uniform as the springform does. A 9 inch pie pan is the best size for this recipe.
- Do not add more eggnog as it doesn't thicken up the pudding like the milk does. You can end up with soup pie instead of eggnog pie.
- This is not an overly sturdy pie, so as long as you don't mind if it perfectly holds it's shape, you can pile the whipped cream on top or even make it a thicker pie.
- Cut the pie right out of the fridge. But let it sit for a few minutes before serving. This allows the crust to relax a bit and more easily release from the pan. A thin knife slide under the edge or the tip of the spatula works as well.
- If using a star anise, don't eat the whole thing. They are very strong and hard on the teeth.

MAKE AHEAD AND STORAGE INSTRUCTIONS
Make Ahead: Assemble the pie completely, cover tightly with plastic wrap or a pie lid, and refrigerate for up to 24 hours before serving. The flavor improves overnight, making this an excellent make ahead dessert.
Refrigerate: Store the pie covered in the refrigerator for up to 4 days.
Freezing: Wrap the whole pie tightly with plastic wrap and then a layer of aluminum foil and freeze up to 2 months. Thaw in the refrigerator before serving.

This No Bake Eggnog Pie is creamy, festive and tastes like a slice of holiday cheer straight from the dessert table. With it's velvety texture and warm spices, it's the perfect treat for your holiday celebrations.
Ingredients
- 1 ½ cups gluten free graham cracker crumbs (9 graham cracker sheets)
- 6 tbsp unsalted butter, melted
- 2 packages vanilla instant pudding
- 1 ½ cup whole milk
- 1 cup eggnog
- 1 tsp ground nutmeg (more for garnish)
- ½ tsp rum extract
- 4-8 oz Cool Whip for topping
- Whole Star Anise (optional garnish)
Instructions
- Add the graham cracker crumbs and melted butter to a medium mixing bowl and mix until the crumbs are well coated with the butter and the mixture is similar to wet sand.
- Press into your springform pan and up the edge about an inch.
- Place in the freezer until your ready to add the filling.
- In a large mixing bowl, combine the pudding mix, eggnog, milk, rum extract and nutmeg.
- Using a hand mixer or stand mixer, beat the ingredients until they are nice and thick.
- Remove your crust from the freezer and gently pour the pudding into the middle of the crust.
- Using a rubber spatula, spread the pudding mixture even so it sits flat.
- Place in the fridge for four hours or until cooled through and set.
- Using a frosting bag and tip, if desired, place dollops of cool whip around the entire edge of the entire pie. Place a whole star anise in the middle of the pie and prop a few in between every couple of the cool whip dollops. Sprinkle with a bit of ground nutmeg to finish garnishing.
- Serve and enjoy!
