I think there's just something about that creamy, tangy, slightly charred flavor combination that makes every bite feel irresistible. So naturally, turning those flavors into a chicken salad felt like the next best thing and honestly, I think it might be my favorite version yet.

Step 1: Char onion, pepper and corn

In a skillet with oil, char the diced onion, red bell pepper and corn.

Step 2: Make the dressing and combine all ingredients

In a large bowl, add the mayo, sour cream, lime zest and juice, cumin, chili powder and paprika. Then add the shredded chicken, charred veggies, jalapenos, cilantro, scallions and top with the crumbled queso fresco cheese.

  • 4 cups cooked chicken, shredded
  • 3 cups corn
  • 1 red onion, diced
  • 1 red bell pepper, diced
  • ½ cup mayo
  • ½ cup sour cream
  • 2 tbsp avocado oil
  • 1 cup queso fresco cheese, crumbled
  • ⅓ cup scallions, chopped
  • ⅓ cup cilantro, chopped
  • 1 jalapeno, diced
  • 1 lime, juiced and zested
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • ½ tsp salt

Instructions

  1. In a large skillet, add the oil, diced onions, corn and diced red bell pepper. Sprinkle the salt over top. Stir and cook on high heat, letting it char slightly.
  2. In a large bowl, add the mayo, sour cream, lime zest and juice, cumin, chili powder and paprika, stir until combined.
  3. Add the cooked chicken and all the charred veggies from the pan. Add the jalapenos, cilantro and scallions, stir to combine everything. Top with the crumbled cheese. Scoop into your favorite bread or on crackers to enjoy!
