- 4 cups cooked chicken, shredded
- 3 cups corn
- 1 red onion, diced
- 1 red bell pepper, diced
- ½ cup mayo
- ½ cup sour cream
- 2 tbsp avocado oil
- 1 cup queso fresco cheese, crumbled
- ⅓ cup scallions, chopped
- ⅓ cup cilantro, chopped
- 1 jalapeno, diced
- 1 lime, juiced and zested
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp paprika
- ½ tsp salt
Instructions
- In a large skillet, add the oil, diced onions, corn and diced red bell pepper. Sprinkle the salt over top. Stir and cook on high heat, letting it char slightly.
