    How to Make Easy Homemade Mayo

    With just 5 simple, easy ingredients you can make your own cost efficient, clean homemade mayo in under 5 minutes. In this step by step post, I will show you just how easy it is.

    When I was looking to eat healthier the thought of making my own condiments seemed daunting. Luckily, mayo was the first one I attempted to make and from there I just kept going. Soon I was make them all.

    Unfortunately, commercial mayo is commonly made with soybean oil. Soybeans mimic estrogen in the body. Hello estrogen dominance. They also are the number #1 pesticide sprayed plant. Yuck! Commercial brands also have a lot of not so great stuff such as natural flavors, calcium disodium edta and added sugars.

    In recent years, there are a few cleaner, organic brands that have popped up. While I love that companies are stepping up and creating cleaner versions, they are also alot more expensive and harder to source. I know of two great brands however, one I’ve never seen in my area and the other one is at a high end grocery store. I have found making my own to be economical, easy and satisfying.

    Ingredients for Homemade Mayo

    • Avocado oil
    • Egg
    • Mustard powder
    • Garlic cloves
    • Lemon juice (or 1/2 lemon)

    Step by Step Instructions on how to make

    Step 1: Gather ingredients. Place avocado oil in a wide mouth mason jar.

    Step 2: Add garlic cloves, mustard powder, lemon juice and one egg.

    Step 3: With an immersion blender, place it at the bottom of the jar. Turn on and slowly move up. The mixture will begin to emulsify and blend together.

    Step 4: Remove immersion blender out of jar and let mayo sit on counter for 1 hour.

    Immersion blender or regular blender?

    I highly recommend using an immersion blender as the ingredients will emulsify and come together nicely. Using a high powered blender will not work for the consistency you will want. Click here for the immersion blender I recommend.

    What are the best eggs to use?

    If at all possible, using eggs that are pastured raised is best. I personally, use the eggs from my free range backyard chickens. If you don’t own chickens, a local farm usually has great eggs from chickens raised on pasture. Vital Farms is the commercial brand that I recommend.

    Why lemon juice is important to use

    If your worried about raw eggs, I wouldn’t be especially if you know where they are coming from. Another great thing to remember is that the acid from the lemon juice will kill any pathogens if the eggs are carrying any. This is another reason why it is mentioned to leave the mayo on the counter one hour after making to sit.

    Why should I make homemade mayo?

    • Healthier- homemade mayo is going to be so much healthier than store bought brands. No GMO soybean oil and fillers to content with. Avocado oil has so many health benefits that it is one of the best oils you can add into your diet.
    • Simplicity/Time- this takes literally 5 minutes to make with ingredients you most likely already have on hand.
    • Cost- healthier brands of mayo can be very expensive and depending on where you live you might not have access to them. Using your own ingredients at home will save you so much money.

    Homemade mayo tips + tricks

    • Use a room temperature pasture raised egg.
    • The best type of jar to use is going to be a wide mouth mason jar.
    • If you want to make into a garlic aioli type sauce, add 1 or 2 more cloves of garlic.
    • Leave on the counter for 1 hour after making to let the acid from the lemon combine well with mixture to kill any potential pathogens.
    • If for some reason, your mayo is not emulsifying in the jar, add another egg and pulse the blender then move slowly up the jar.

    Storing

    • Refrigerator- store in a mason jar with a sealed tight lid for up to 2 weeks.
    • Freezing- mayo does not freeze well so I would not recommend doing it.

    Ingredients

    Scale
    • 1 cup avocado oil
    • 1 large egg (room temperature)
    • 2 cloves garlic
    • 1 tsp lemon juice or 1/2 juice from a lemon
    • 2 tsp mustard powder

    Instructions

    5. Refrigerate after 1 hour in a sealed jar or container.
