These honey roasted baby carrots are the perfect blend of sweet and savory, with a caramelized glaze that brings out their natural flavor. They're an easy, wholesome side dish that feels just a little bit fancy- great for weeknight dinners or as part of a spread for a holiday gathering.

Baby carrots are such a fun and easy side dish like my Slow Cooker Mexican Street Corn. They come together in no time and you can totally dress them up. This is one of our family's favorite weeknight side dishes but it is also elegant enough to be served during the holidays. They also make a great snack for picky eaters.

These honey roasted baby carrots are made with multi-colored baby carrots that are topped with a honey based glaze lending to perfect caramelization of the carrots. They bake up on one sheet pan and then ready to serve. You can even customize to your liking. Want them sweeter? Add cinnamon. Want them spicy? Add a dash of cayenne pepper or red pepper flakes.

INGREDIENTS + SUBSTITUTIONS

  • Baby carrots: I recommend using 2 lbs of baby carrots, rinsed and dried well. You can use just orange ones or multi-colored ones.
  • Honey: The sweetener to the mixture that helps caramelize the carrots. Maple syrup is another alternative.
  • Olive oil: Use a high quality oil. You can also use avocado oil, if you prefer.
  • Melted butter: Adds rich flavor.
  • Salt: To taste.
  • Garlic powder: A little aromatic flavoring.
  • Fresh parsley and ground pepper: For garnish.

HOW TO MAKE ROASTED BABY CARROTS

Step 1: Prep baking sheet and make the glaze

Pre-heat the oven to 400 degrees F. Line a baking sheet with parchment paper.

In a mixing bowl, whisk together honey, olive oil, melted butter, salt and garlic powder.

Step 2: Combine the carrots with the glaze

Place the baby carrots on the baking sheet spread out evenly. Then, pour the glaze over all the carrots coating evenly.

Step 3: Bake

Bake at 400 degrees F for 30-40 minutes. The carrots will be done when fork tender.

EMILY'S TIPS

  • Use baby carrots. If your not using pre-cut baby carrots, slice whole carrots into equally smaller size for even roasting.
  • Rinse and dry carrots before roasting. Rinse off any blemishes or dirt and thoroughly dry to prevent steaming.
  • Don't overcrowd the pan. Spread the carrots out into a single layer so they caramelize well.
  • Stir halfway. Flip the carrots so they can cook evenly.
  • Feel free to spice up the carrots with a dash of cinnamon, cayenne pepper or red chili flakes.
  • You can also swap honey for maple syrup if you prefer a more earthy sweetness.

Freezing: I don't advise freezing as this will change the texture.

Can I use whole carrots instead of baby carrots?

Sure! Just cut your whole carrots evenly into smaller pieces.

How do I know when there done?

They should be fork tender with slightly golden edges that are caramelized.

Can I make these roasted carrots ahead of time?

Yes! You can roast them 1 to 2 days in advance and reheat in the oven before serving.

  • 3 tbsp honey
  • 2 tbsp olive oil
  • 2 tbsp butter, melted
  • ½ tsp salt
  • ½ tsp garlic powder
  • Chopped fresh parsley and black pepper for garnish
