    Healthy Mixed Berry Parfaits

    These healthy mixed berry parfaits make the perfect summertime dessert, afternoon treat or even a fast breakfast option.

    I’m a fan of simple and easy. These no bake mixed berry parfaits are just that. What a perfect dessert or afternoon snack or even a quick meal prepped breakfast for on the go.

    We are deep in the throughs of berry season here in Southeastern Virginia along with many parts of the country. Local farms are bursting at the seams with fresh blueberries, strawberries and blackberries. One of my favorite things to do is go pick berries and I mean pick berries. When we go, we pick gallons and then freeze them to enjoy all year round.

    Blueberries just so happen to be my favorite berry as you can see from the other blueberry recipes you might enjoy on the site Gluten Free Banana Blueberry Bread, Gluten Free Blueberry Crumble and Chocolate Blueberry Protein Pudding Pops.

    These healthy mixed berry parfaits are easy to assemble and come together in no time. They are a great no bake dessert option for those summertime get togethers.

    Ingredients to make

    • Greek style yogurt
    • Strawberries
    • Blueberries
    • Granola
    • Vanilla Extract

    How to make

    Gather ingredients.

    Mix in vanilla extract with yogurt.

    Then, layer yogurt on the bottom of jar/glass.

    Add a layer of berries.

    Next, add granola.

    Continue layering until finished.

    Let sit in the refrigerator for 15 minutes to chill, then serve.

    Substitutions/ Variations

    • Yogurt– you can use any type of Greek yogurt whether dairy or dairy free. You also can sub coconut creme for yogurt as another dairy free option.
    • Berries– use whatever berries you have on hand. They don’t have to be specifically blueberries or strawberries. If you have raspberries or blackberries they will work perfect too.
    • Vanilla Extract– this gives plain yogurt a little kick but if you wanted to use almond extract that would be fine too. Do what works for you.
    • Granola– there really is no substitution for granola but you can spice up your granola however you want too. Add chocolate chips or any type of nuts or seeds to top the parfait with.

    Tips for making the best healthy mixed berry parfait

    1. Fresh berries– these make the best parfaits since the berries don’t need to be unthawed. You can use frozen but they will need to unthaw before eating.
    2. Greek style yogurt– this type of yogurt not only has protein but the thickness will create a creamy texture when mixed with the berries and granola.
    3. Let chill before serving– this parfait tastes the best after it has been assembled and let sit for 15-20 minutes.
    4. Customization– it’s always nice when you have options. You can use whatever berries are in season in your area. Use homemade granola or store bought- it’s up to you and what you enjoy!

    Can I make dairy free?

    Yes, I have used Kitehill Almond based yogurt that is thicker than coconut yogurt when making dairy free. You could also use coconut creme that has a thick base if you didn’t want to use yogurt.

    Can I meal prep ahead?

    Yes, these parfaits make great meal prepped breakfasts or prepared desserts. If making ahead for breakfast, just assemble the night before and leave in refrigerator to chill.

    Can I use frozen berries?

    Yes, you can use frozen berries just make sure they are slightly unthawed before eating.

    Ingredients

    Scale
    • 1 cup Greek style yogurt
    • 1/2 cup blueberries
    • 1/2 cup strawberries
    • 1/2 cup granola
    • 1 tsp vanilla extract

    Instructions

    1. Mix vanilla extract into yogurt.
    2. Begin assembling by layering yogurt on bottom of cup, then berries, then granola.
    3. Repeat as desired.
    4. Let sit in refrigerator for 15 minutes to chill, then serve!
