    Healthy Blueberry Oatmeal Bake

    This healthy blueberry oatmeal bake is the perfect breakfast to enjoy with family over the weekend and makes an awesome meal prep for the week.

    This recipe has become a breakfast staple in our home over the past year. I don’t know what has taken me so long to get it up on the blog. I’m excited for you to try it so here it is.

    Healthy blueberry oatmeal bake is simple to make and put together. My 7 year old son can even prepare it for the family on Saturday mornings.

    Since everyone is typically home, we make this recipe the same morning we want to enjoy it. However, I know first hand how much of a lifesaver this recipe is when I had my last baby this spring. We made several ahead so we could just unthaw the night before and pop in the oven the next morning. It re-heats very well and keeps the moisture good so the oatmeal doesn’t dry out.

    Ingredients you will need:

    • Gluten free oats
    • Fresh blueberries
    • Butter
    • Milk
    • Maple syrup
    • Applesauce
    • Eggs
    • Baking powder
    • Cinnamon
    • Nutmeg
    • Vanilla extract

    How to Make

    Pre-heat oven to 375 degrees and spray a 9 x 13 baking dish with cooking oil spray.

    Combine all ingredients into large mixing bowl and stir until combined.

    Pour into baking dish, spread evenly and place in oven for 30 minutes.

    Take out and let cool, then serve.

    1. Customizable– this recipe has several variations and substitutions to fit many peoples dietary needs.
    2. Easy prep– just combine ingredients and place in oven to bake. Super simple and super easy.
    3. Healthy and good for you- oatmeal plus blueberries provide lots of fiber and both are rich in antioxidants.

    Substitutions/Variations

    • Gluten free oats– you can use either old fashioned rolled oats or quick cook rolled oats. I prefer the old fashioned for this recipe but either or will work fine.
    • Fresh blueberries– this recipe is customizable so you could use whatever berries you have on hand. You could use frozen, just make sure to pat off any excess water.
    • Butter– you can sub out for ghee or coconut oil
    • Maple syrup– you can sub out for honey
    • Apple sauce– a medium size ripe banana
    • Egg– if vegan or egg allergy, you can do a flax egg. 1 tbsp flaxseed meal and 2 1/2 tbsp water
    • Milk– you can use any milk of choice- dairy or non-dairy

    Can I make this recipe dairy free?

    You can switch out the butter for either ghee or coconut oil. I have a great how to make ghee recipe here.

    What are the best type of oats to use?

    The best oats to use are old fashioned rolled oats. They are going to be hardy and filling.

    Can I use frozen blueberries?

    Yes, just make sure to pat dry any excess water that’s on them so the bake won’t have runny blueberries.

    Can this recipe be meal prepped?

    Yes, there are two ways. You can prepare ahead of time then re-heat when ready to enjoy. You can also combine ingredients into a bowl, cover placing in refrigerator then take out and transfer to baking dish to put into the oven.

    Storage + Reheating

    Refrigerator– store in an air tight sealed container for up to 3 days.

    Freezer– store in a freezer safe container for up to 3 months.

    Reheating– If frozen, take out the night before to unthaw in the refrigerator. In the morning, place in a 350 degree oven for 10 minutes or until warm.

    Ingredients

    Scale
    • 2 3/4 cup gluten free old fashioned rolled oats
    • 2 cups fresh blueberries
    • 2 eggs
    • 1/3 cup maple syrup
    • 1/2 cup applesauce
    • 1 1/2 cup almond milk (or milk of choice)
    • 1/4 cup butter (melted)
    • 1 1/2 tsp cinnamon
    • 1 tsp nutmeg
    • 1 tsp baking powder
    • 1 tsp vanilla extract

    Instructions

    1. Pre-heat oven to 375 degrees.
    2. Spray 9 x 13 baking dish with cooking oil spray.

    Notes

    • If your wanting the bake to be more firm or to have a bread like texture, leave in an extra 5 minutes.
