The Best Italian Grinder Salad
If you've ever found yourself picking all the good stuff out of an Italian sub, this Grinder Salad is about to become your new favorite lunch. It's packed with crisp lettuce, savory deli meats, creamy dressing, tangy peppers and plenty of crunch in every bite.

There's a reason grinder sandwiches have been a staple for decades. Originating in New England, grinders are essentially hearty Italian style submarine sandwiches that are loaded with deli meats, cheese, lettuce, tomatoes, onions and a creamy dressing. The Grinder Salad takes everything people love about those classic sandwiches and transforms it into a lighter, veggie packed dish that's just as satisfying.
What makes this salad so irresistible is the combination of flavors and textures. Crisp romaine or iceberg lettuce provide the perfect crunchy base, while savory meats, creamy provolone cheese, zesty pepperoncini and a rich dressing create the perfect balance of salty, tangy, creamy and fresh all without the heavy bread.
And honestly? This is the kind of recipe summer was made for. Whether you're meal prepping lunches, feeding a crowd at a backyard bbq or looking for an easy weeknight dinner, this salad delivers big flavor and is naturally gluten free. WHY THIS IS THE BEST GRINDER SALAD
- All the flavor of an Italian sub without the bread. This salad is naturally gluten free making it great for those of us with intolerance or Celiac disease.
- Packed with protein. Between the deli meats and cheese, this salad is very filing with over 15g for a single serving.
- Perfect for hot summer days. This no cook recipe comes together quickly and taste incredibly refreshing straight from the fridge.
- Meal prep friendly. Prep the ingredients ahead of time and store the dressing separately. When ready to eat, just toss everything together.
- Customizable. Use your favorite deli meats, swap cheeses, add extra veggies or adjust the dressing to suit your tastes.
INGREDIENT & SUBSTITUTION NOTES
- Iceberg lettuce: I recommend a small head of iceberg lettuce shredded finely but you can also use romaine for that crunch.
- Ham, salami and pepperoni: Use whatever type of deli meats you'd like to use for this salad and slice in strips. Some other common meats are turkey and prosciutto.
- Provolone cheese: Cut into strips or cubes. You can also use cheddar, Swiss, Monterey Jack and feta.
- Red onion and pepperoncini: Slice very thinly. White onions and banana peppers can be used interchangeably here.
- Cherry tomatoes and black olives: Half the cherry tomatoes but romas will work. Black olives, green olives or kalamata olives are fine too.
- Dressing: Mayo, red wine vinegar, dried oregano, garlic powder, sugar, salt and pepper.

EMILY'S EXPERT TIPS
- Chop everything small. The best grinder salads have finely chopped ingredients so you get a little bit of everything in each forkful.
- Dry your lettuce thoroughly. Excess moisture can dilute the dressing and make the salad soggy. A salad spinner works wonders here.
- Add dressing before serving. You don't want the lettuce to become soggy.
- Chill before serving. Allowing the prepared ingredients to chill for 15-20 minutes gives the flavors a chance to come together.
WHAT TO SERVE WITH A GRINDER SALAD
This hearty salad can easily stand on it's own, but it pairs so well with:
- Homemade chips
- Roasted potato wedges
STORAGE AND MEAL PREP INSTRUCTIONS
Storage: Store leftover dressed salad in an airtight container in the refrigerator for up to 1 day. If the salad releases moisture during storage, simply drain any excess liquid and toss before serving.
Meal prep: Keep the lettuce, toppings and dressed stored separately for up to 3 days in the refrigerator. Avoid freezing, as the fresh vegetables and dressing do not thaw well.
