Grain Free Breakfast Tacos

These grain free breakfast tacos come together easily to make your morning that much better. Packed with healthy fat, protein and carbs, it’s the perfect breakfast. (GF + DF)

Breakfast tacos were a pretty common breakfast options when I lived in Texas. Having come from living in the Mid-Atlantic, I had never heard such a thing. While my work office back home usually had bagels and donuts; out in Texas it was breakfast taco platters.

Torchy’s Tacos had the best breakfast taco (in my opinion). I’ve since come to the conclusion that breakfast tacos are totally socially acceptable anytime for breakfast, lunch or even dinner.

Ingredients

  • Gluten-free tortillas (I use Siete)
  • Eggs
  • Bacon
  • Avocado
  • Salsa
  • Ghee

How to Make + Assemble

In a skillet pan on medium heat, place tortilla shell down and warm each side for 1 minute. Set aside.

In same skillet melt the ghee, scramble eggs then when done transfer to tortilla shell. Fry bacon is the same pan then transfer to tortilla.

Top with avocado chunks and salsa. Enjoy!

Variations

  • Meat- instead of bacon, use ground breakfast pork sausage, chorizo, Italian sausage
  • Toppings- hot sauce, sour cream or cheese
  • Vegetarian- sub out the meat for black beans, chickpeas, tofu or meat substitute of choice.

  • Flavorful- I love the flavors especially the hot sauce with eggs and avocados. Takes me back to Texas every time.

Are breakfast tacos healthy?

Yes, they can be. The eggs and bacon are a perfect source of protein. The avocado is an excellent fat. The salsa is loaded with tomatoes, peppers and cilantro. The grain free tortilla is light and easy on the digestive system. These tacos are gluten and dairy free made following the recipe.

Meal prep + Make ahead

These tacos are perfect to make ahead the ingredients such as the bacon and eggs then assemble in the morning. If assembling them the next morning, microwave for 20-30 seconds to warm or enjoy cold.

Ingredients

Scale
  • 2 tortillas
  • 4 eggs
  • 4 slices of bacon
  • 1/2 avocado
  • 1/2 cup salsa
  • 1 tbsp ghee

Instructions

  1. In a skillet pan on medium heat, place tortilla shell down and warm each side for 1 minute. Set aside.
  2. In same skillet melt the ghee, scramble eggs then when done transfer to tortilla shell. Fry bacon is the same pan then transfer to tortilla shell.
  3. Slice avocado into 1 inch chunks and place on top of bacon.
  4. Top with salsa.

Notes

  • For grain free, use Siete tortillas. They have several varieties of grain free to choose from- almond flour, cassava flour and chickpeas.
  • Looking to make this vegetarian, omit the meat and sub for tofu, black beans or meat substitute of choice.
