HOW TO MAKE GLUTEN FREE SUGAR COOKIES
Step 1: Combine ingredients to make cookies

Ingredients
For the cookies:
- 2 ½ cups gluten free 1:1 baking flour with xanthan gum
- 1 cup butter, softened
- 1 cup granulated sugar
- 1 egg
- ¼ cup sour cream
- 3 tbsp cornstarch
- 2 tsp vanilla extract
- ½ tsp almond extract
- 1 ½ tsp baking powder
- ¾ tsp salt
For the icing:
- 1 ½ tbsp meringue powder
- 2 cups powdered sugar
- 4-5 tablespoon room temperature water
- Food coloring (optional)
Instructions
Make the cookie dough:
- Place the softened butter into a large mixing bowl or bowl of a standing mixer, add sugar and mix either with paddle attachment or electric mixer until light and fluffy. This will take about 2-3 minutes on medium-high speed.
- Add in the egg, vanilla, almond extract, baking powder and salt then mix until evenly combined.
- Turn mixer on low speed, add in ½ of the sour cream, cornstarch and ½ of the baking flour. Repeat this step again, adding in the rest of the sour cream and baking flour. Be sure to scrape down the sides of the bowl during this process, as well as after to make sure everything is evenly incorporated.
- Once the dough is formed, divide it in half and roll into a ball then flatten it slightly. Wrap the divided dough in plastic wrap and refrigerate for at least 1 hour.
Bake the cookies:
- After the dough has been chilled, preheat the oven to 350 F and line 2 baking sheets with parchment paper.
- Remove the dough from the plastic wrap and place on a floured surface. Sprinkle the rolling pin with the flour as well as the top of the cookie dough and start rolling it out until about ¼ inch thick.
- Using a cookie cutter, cut out the dough and place onto the baking sheets until all the dough has been used.
- Bake for 10-12 minutes.
- Once cookies are finished baking, remove from the oven and let sit for 5 minutes before transferring them to a wire rack.
- Cookies must be completely cooled before decorating.
Make the icing (optional)
- Sift the powdered sugar into a mixing bowl, add the meringue powder and about 4 tablespoon of water. Whisk together on high speed for about 2 minutes. If icing is too stiff with stiff peaks dribble in water a little bit at a time until you reach the desired consistency. The longer you mix the icing, the stiffer it will become.
- If coloring the icing, separate into bowls and place a drop of food coloring or a dipped toothpick into the icing then mix with a spoon.
