Description
These festive Gluten Free Red, White and Blue Cookie Bars are soft, chewy, buttery, and loaded with patriotic colors in every bite. They make the perfect summertime dessert to enjoy with family and friends.

- 2 cups Gluten Free 1:1 flour with xanthan gum
- 2 cups Old fashioned oats
- 1 cup creamy peanut butter
- 2 eggs
- 1 cup butter, room temperature
- 1 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 cup white chocolate chips
- 9 oz package of Red, White and Blue M&Ms
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 tsp salt
Instructions
- Preheat the oven to 350 F and grease a 9x13 inch baking pan.
- In a large mixing bowl, cream together the brown sugar, granulated sugar and butter until light and fluffy.
- Add the eggs and vanilla extract, mixing until fully combined. Stir in the peanut butter until smooth and incorporated.
- Add the gluten free 1:1 flour, oats, baking soda and salt, mixing until combined-be careful not to overmix.
- Fold in the white chocolate chips and M&Ms, reserving 1/4 cup of M&Ms for the top.
- Press the cookie dough evenly into the prepared baking pan and sprinkle the remaining M&Ms over the top.
- Bake for 25-30 minutes or until the bars are golden brown.
Notes
- Combine all ingredients until incorporated without overmixing.
- Use creamy peanut butter for best texture.
- Feel free to use other festive candies or sprinkles depending on holidays, birthdays etc.
- Be sure to reserve some of the M&Ms for the top to decorate.
- Storage: Place in an airtight container at room temperature for up to 5 days. You can also place in an airtight container in the refrigerator.
