If you grew up eating boxed hamburger helper, you know exactly how comforting that first cheesy bite can be. It was one of those meals that magically showed up on busy nights and somehow made everything feel a little easier. This homemade gluten free version brings all of that back without the box or mystery ingredients.

What I love about this gluten free hamburger helper is the texture. The pasta is tender but not mushy, the sauce is ultra creamy, and the cheesy flavor is rich without being heavy. It's comforting, satisfying and tastes like a hug in a bowl.

Best of all, this is one of those dinners that both kids and adults genuinely love. It's simple enough for picky eaters, but flavorful enough that grown ups go back for seconds. If you love easy weeknight meals like my Sheet Pan Beef and Broccoli, this Slow Cooker Chicken and Vegetables and my Easy Greek Chicken Bake, this recipe will fit right into your rotation.

EMILY'S TIPS

  • Brown the beef before adding liquids. I have found that it needs to develop a little color for deeper flavor before moving onto the next step.
  • Don't overcook the pasta. Remove from heat as soon as it's tender since gluten free pasta can turn mushy quickly.
  • Use freshly shredded cheese. Pre-shredded cheese doesn't melt as smoothly and can affect the sauce texture.
  • Adjust the liquid as needed. Different pasta brands absorb liquid differently so add a splash of broth or cream if it thickens too much.

SERVING SUGGESTIONS

This gluten free hamburger helper is a full meal on it's own, but it pairs perfectly with a simple side salad or bread like these Easy Gluten Free Dinner Rolls or even these Flaky Gluten Free Buttermilk Biscuits.

I often gives a side of fresh cut up fruit for my kids and they also enjoy these Honey Roasted Baby Carrots. Adults could add a side of steamed broccoli or green beans.

MAKE AHEAD AND STORAGE INSTRUCTIONS

  • Make Ahead: You can cook it up to 2 days ahead of time, but slightly undercook the pasta so it stays tender when reheated.
  • Refrigerate: Store any leftovers in an airtight container for up to 4 days.
  • Reheating: Place in a stovetop pan over low heat with a splash of cream, stirring until warmed through.

RECIPE FAQ'S

What gluten free pasta works best for this recipe?

Elbow macaroni, rotini or small shells are the best types. I like the Jovial brand but Barilla and Banza are good too.

Will this taste like boxed hamburger helper?

It's very similar, but richer, fresher and way more flavorful. Plus, healthier since it's made with ONLY real ingredients.

What cheese works best?

Sharp cheddar or cheddar jack blend melts wells and adds great flavor but I've also used shredded mozzarella in a pinch too.
