Gluten Free Cranberry Apple French Toast Bake

This delicious gluten free cranberry apple french toast bake is the perfect Christmas morning breakfast or brunch that can be prepared same day or ahead of time. This recipe is also dairy free too.


  • 1 loaf gluten free bread
  • 10 eggs
  • 8 oz bag of cranberries
  • 68 gala apples (chunks)
  • 1 can full fat coconut milk
  • 1/2 cup coconut sugar
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/3 cup walnuts (optional)
  • 1 tbsp powdered sugar (optional)


  1. Preheat oven to 325 degrees. Cut bread into 1 inch thick chunks. Place bread chunks on baking sheet and toast for 15 minutes. Bump up oven to 400 degrees if you are baking same day.
  2. In a 9 x 13 baking dish, spray the bottom of the dish with cooking spray then place some of the bread chunks over the bottom of the dish.
  3. Mix together the coconut sugar, cinnamon, nutmeg and sprinkle half over the bread chunks. Add in 1/2 of the cranberries and apple chunks on top of the bread.
  4. Next continue layering bread chunks then sugar mixture then remaining cranberries and apple chunks.
  5. In a medium bowl, whisk eggs then add in coconut milk and vanilla extract. Pour over the whole french toast bake. Top with walnuts, if desired.
  6. Place in oven covered and bake for 40 minutes.
  7. Take out of oven, sprinkle with powdered sugar and maple syrup. Enjoy!


  • Oven times will vary, so keep an eye on it. The bread tops will become golden brown when done.
  • If making overnight, make the bake as directed then cover and place in refrigerator. Take out the next morning and pop in the oven.
  • You can use regular milk or whipping cream if not concerned with dairy.
