Gluten Free Banana Blueberry Bread {No refined sugar}

This easy gluten free banana blueberry bread is sure to be a hit at a holiday brunch, office party or an afternoon snack with your favorite beverage. It is super moist and will melt in your mouth. Bonus, it is also dairy free too!

I’m a huge fan of banana bread but I’m also a big fan of blueberries. The combination sounded perfect to me when coming up with this recipe. This bread not only is gluten free and dairy free but also no refined sugars. In place of sugar, I used applesauce.I believe this lends to the moistness of the bread. In addition, the bananas and blueberries are naturally sweet. Don’t worry this bread will satisfy everyone’s sweet tooth.

How to make

You will want to start by pre-heating the oven to 350 degrees. Next, grease a loaf pan and set aside. In a small bowl, mash the ripe bananas up until they are runny. Stir in the melted ghee. In a large mixing bowl, add the applesauce, eggs, vanilla extract, salt, cinnamon, gluten free baking flour, baking soda and baking powder. Combine the two bowls creating a batter consistency. Lastly, add in the blueberries and mix together. Pour the batter into the loaf pan. Bake in oven for a minimum of 50 minutes. Ultimately, check at 50 minutes to see if bread is done. Use a toothpick to determine if the bread is done by inserting into center of bread, then lift out to see if it comes clean.

What types of blueberries work well?

I prefer to use fresh blueberries. Fresh blueberries will not make the bread soggy. You can use frozen blueberries. If you plan to use frozen, please let them unthaw then wipe off any excess moisture. This will guarantee the bread will be moist but not sopping wet.

How do you store?

Store? We don’t have that problem in this house. LOL! It’s gone in hours. But, to properly store, wrap tightly in plastic wrap or beeswax wrap to seal in the moisture if leaving on countertop for a day. If longer than a day, wrap tightly just like listed above and place in airtight container to store in the refrigerator. When refrigerated, it should last 3-5 days.

Can you freeze banana blueberry bread?

Of course, wrap tightly in plastic wrap to seal in the moisture then place in freezer protected airtight bag or container. When frozen, should last up to 3 months.

Ingredients

Scale
  • 2–3 medium ripe bananas
  • 1 pint fresh blueberries
  • 2 eggs
  • 1 1/2 cup 1 for 1 gluten free baking flour (I use Bob Red Mills) 
  • 1/3 cup melted ghee
  • 1/2 apple sauce
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease a loaf pan, then set aside.
  3. In a small mixing bowl, mash bananas until smooth, stir in melted ghee.
  4. In a large mixing bowl, combine apple sauce, eggs, cinnamon, vanilla extract, salt, baking flour, baking powder and baking soda. 
  5. Combine the mashed bananas and ghee with the ingredients in the larger bowl. 
  6. Mix together to create a batter.
  7. Lastly, you will pour the blueberries in and combine.
  8. Pour batter into loaf pan.
  9. Bake in oven for minimum 50 minutes.
  10. Let cool completely before serving.

Notes

  • If you are not worried about being dairy free, you can use melted butter in place of melted ghee.
  • Be sure to check the bread at 50 minutes since every oven is different to see if it is ready or needs more time. 
  • Fresh blueberries are best but frozen works well too. See blog post for greater details.
