HOW TO MAKE FLOURLESS CHOCOLATE TORTE

Step 1: Preheat oven then combine chocolate chips and butter

Preheat the oven to 325 F and line a 9-inch springform pan with parchment paper. Set aside.

In a large microwave safe bowl, heat the chocolate chips and butter on 30 second intervals and stir until melted and smooth.

Step 2: Whip egg whites and add sugar

Add the egg whites to a bowl and place the egg yolks in a separate bowl.

Whip the egg whites until soft peaks form. Gradually add about half of the sugar and continue until stiff peaks form. Set aside.

Step 3: Add sugar to egg yolks then chocolate

Add remaining sugar to egg yolks. Mix until thickened then add the melted chocolate mixture to the egg yolks.

Step 4: Add egg white to chocolate batter

Start by adding half of the egg white mixture to the chocolate batter. Fold gently to combine. Add the remaining egg white mixture and fold to combine.

Step 5: Bake

Place batter in the prepared baking pan and bake for 40 minutes.

Step 6: Serve

Remove from oven and let cool to room temperature. Dust with powdered sugar and serve.

EMILY'S TIPS FOR SUCCESS

  • Use a springform pan. This makes removing the torte clean and easy.
  • Line the pan with parchment paper. This prevents sticking and ensure neat slices.
  • Bring eggs to room temperature. They will incorporate smoothly into the batter.
  • Bake until just set. The center should still look slightly soft; it will firm up as it cools.
  • Cool completely before slicing. The torte needs to set properly and it needs to be cooled in order to do that.

SERVING SUGGESTIONS

Ingredients

  • 1 ½ cup semi-sweet chocolate chips
  • 1 ½ cup unsalted butter
  • 6 eggs
  • ¾ cup sugar
  • ¼ cup cocoa powder
  • ¼ cup powdered sugar, plus additional to dust as decoration
  • Berries, whipped cream and chocolate ganache- to serve

Instructions

  1. Preheat the oven to 325 F degrees. Line a 9 inch springform pan with parchment paper. Lightly spray with non-stick spray and set aside.
  2. In a large microwave safe bowl, combine the chocolate chips and butter. Heat in 30 second increments and stir well between each interval until melted and smooth. Allow to cool to room temperature.
  3. In a bowl of a stand mixer, add the egg whites (make sure there is no egg yolk). Place the egg yolks in their own mixing bowl for the next step.
  4. Whip the egg whites on medium speed until soft peaks form. Gradually, add about half of the sugar and continue to mix until stiff peaks form. Set aside.
  5. Add the remaining sugar to egg yolks. Mix on medium until pale yellow in color and slightly thickened, about 2-3 minutes.
  6. Add the melted chocolate mixture to the egg yolks as soon as it as cooled. Mix to combine, scraping down the sides as needed.
  7. Using a spatula, add about a half of the egg white mixture to the chocolate batter. Fold gently to combine.
  8. Add the remaining egg white mix and fold to combine.
  9. Gently scrape the batter into the prepared baking pan and spread evenly.
  10. Bake in the preheated oven for approximately 40 minutes. The top will rise up and then fall once it cools, this is normal.
  11. Remove from the oven and allow to cool to room temperature.
  12. Carefully remove the torte from the pan and dust with powdered sugar prior to serving.

  • Use a 9-inch springform pan for the chocolate torte.
  • Use a high quality chocolate powder and high quality semi-sweet chocolate chips.
  • Line pan with parchment paper. 
  • Bake until just set which means the center should still look slightly soft.
