Farmer’s Breakfast Hash

This Whole 30 Farmer’s Breakfast Hash is hardy, filling and flavorful from your backyard garden or local farmer’s market.


  • 2 tbsp ghee
  • 1 white potato
  • 1 purple sweet potato
  • 1 yellow squash
  • 1 onion
  • 1 garlic clove
  • 1 lb ground pork
  • 24 eggs
  • 1/2 turnip
  • 1 tsp black pepper
  • 1 tsp red pepper
  • 1 tsp sage
  • 1 tsp thyme


  1. Dice all vegetables into 1 inch cubes, then set aside
  2. On medium heat, melt 1 tbsp of ghee in skillet pan
  3. Saute diced onion and garlic in pan with melted ghee
  4. Add turnip, squash and potatoes to the garlic and onion mixture and cover for 10 minutes
  5. Stir vegetable mixture every few minutes so it doesn’t stick to pan
  6. In another pan, melt 1 tbsp of ghee
  7. Place sausage in pan and add spices, as necessary
  8. Cook sausage until brown
  9. Combine sausage into skillet pan with cooked vegetables
  10. Using the leftover grease from the sausage pan, fry the eggs then transfer to main skillet atop the hash
  11. Serve with black pepper, chives, hot sauce or fruit, if desired
