    Easy No Bake Chocolate Chip Bites

    Easy no bake chocolate chip bites are the perfect bite size snack. They are cool, chewy and oh so yummy. An excellent treat anytime of year.

    Of all my no bake desserts, this has to be my favorite one! It reminds me a little bit of edible cookie dough. It is the perfect sweet treat that will curb your cravings anytime. I love that there are no added sugars and that they are totally gluten-free. They also can be made dairy-free by using these chocolate chips right here. Another thing I love is that no baking is involved. Yay! No bake desserts are life savers in my book. These no bake bites are made with all real, wholesome ingredients that you can feel good about and totally guilt free.

    Ingredients

    • Oat flour
    • Almond butter
    • Applesauce
    • Maple syrup
    • Chocolate chips
    • Almond extract
    • Vanilla extract
    • Salt

    How to Make

    Combine all ingredients into one bowl. Make sure almond butter is already in a liquid state. If not, place in microwave for 25 seconds. Once combined, place in bowl in refrigerator for 20 minutes.

    After the mixture has chilled, roll into individual size balls. It should make about 20 balls and place on a cookie sheet. Now, place in freezer for 6 hours or overnight.

    Take out and let soften for 5-10 minutes then enjoy!

    Substitutions + Variations

    • Oat flour- this recipe is made best with oat flour for the consistency and texture to remain the same. If trying to stay gluten-free, you can use a gluten-free 1 for 1 flour to get the same texture just know it will need to be heat treated before use.
    • Almond butter- any nut butter will do. Trying to be nut-free, use sunflower butter.
    • Apple sauce- you can swap with olive oil.
    • Maple syrup- honey can be used 1:1.
    • Vanilla/Almond extracts- you can switch out for butter or peppermint extract depending on the season and your preference.
    • Chocolate chips- dark, semi-sweet or milk chocolate. I enjoy keeping them dairy-free with Enjoylife.

    What to do if I don’t have oat flour?

    You can easily make your own! All you need is a food processor or high powered blender (no grain mill needed) and instant oats. Pulse the instant oats until they turn into flour. Nothing else needs to be added. Watch it go from oats to flour in minutes.

    Serving Suggestions

    Enjoy as a sweet treat:

    • By itself (so good just sitting and enjoying one)
    • With favorite coffee
    • On top of ice cream (hello summertime!)
    • In a bowl of yogurt

    Storage

    Freezer: Keep in a safe freezer bag or sealed glass container for up to 3 months. Take out and place on counter for 5-10 minutes to soften before enjoying.

    Ingredients

    Scale
    • 2 1/2 cups oat flour
    • 3/4 cup applesauce
    • 1/4 cup almond butter
    • 1/4 cup chocolate chips
    • 2 tbsp maple syrup
    • 1/2 tsp vanilla extract
    • 1/4 tsp almond extract
    • 1/4 tsp salt

    Instructions

    1. Combine all ingredients into one bowl and mix together.
    2. Once combined, place in refrigerator for 20 minutes.
    3. After the mixture has chilled, roll into individual size balls.
    4. Place on a cookie sheet in the freezer for 6 hours or overnight.
    5. Take out and let soften for 5 minutes before enjoying.
