As a child in my local community each May there was Greek Fest. I remember during the cold winter months looking forward to this springtime event every year. Personally, while I’m not of Greek decent, I’ve always been drawn to the food of the culture. This easy Greek Chicken Bake takes me back to childhood and my youth enjoying all the Greek food. The spices in this dish are that in traditional Greek culture. This meal comes together very easily as a perfect weeknight meal or great lunch recipe to take to work. Along with the flavors the cherry tomatoes, potatoes, onions, olives, artichokes, pepperoncini and juicy chicken thighs will have this dinner become apart of your meal rotation.
Ingredients you’ll need
- Chicken Thighs (you can sub and use chicken breast)
- Yukon Gold Potatoes
- Red Onion
- Pepperoncini
- Cherry Tomatoes (you can sub diced tomatoes)
- Green Olives
- Kalamata Olives
- Artichokes
- Olive Oil
- Oregano
- Thyme
- Garlic
- Pepper
- Salt
- Feta Cheese (optional, if not dairy-free to add)
How To Make Easy Greek Chicken Bake
Pre-heat oven to 375 degrees.
Place all prepped vegetables and chicken thighs in a 9 x 13 casserole dish.
Sprinkle liberally with spices then pop in the oven for 25 minutes or until chicken and vegetables are cooked.

Take out and drizzle with olive oil then serve!

- Flavors– the oregano, thyme and garlic blend so well together along with all the vegetables and chicken giving this dish the perfect Greek flare.
- One pan meal– the simplicity of this recipe is great for those nights you want something with lots of flavor but short on time. This bake literally takes 30 total to assemble and cook. This could also be a great date night in option or a meal to take to a friend.
- Variety– there are several wholesome vegetables in here that I don’t normally eat like artichokes or pepperoncini. However, you could also customize to your exact liking adding in whatever vegetables you enjoy.
Substitutions + Variations
- Chicken– if not wanting to use chicken thighs or not available, chicken breast work as a perfect option.
- Potatoes– the recipe calls for Yukon gold but russet or even sweet potatoes can be used.
- Vegetables– this dish includes some of the best traditional Greek vegetables- red onion, olives, cherry tomatoes, pepperoncini but you can omit or add to the dish.
- Cheese– if not concerned with dairy, sprinkle some feta cheese over top after taking out of the oven.

Can I Prep Ahead of Time?
Sure, this is an easy meal prep option. Just place all ingredients in the pan and heat in the oven when ready. This also is a great freezer meal option as you can prep all ingredients, seal into a freezer bag then take out and heat when needed.
What To Serve With Greek Chicken Bake
Our family loves to add a small side salad with this meal. You could also try this low carb cilantro-lime cauliflower rice. Other options if not whole 30 or paleo would be a side of quinoa, couscous or rice.
How To Store
Refrigerator– store in an airtight sealed container for up to 4 days. Again, great lunch meal prep for the week.
Freezing– store in an airtight freezer bag for up to 2 months.

- 4 Chicken Thighs
- 4–5 small Yukon Gold Potatoes (diced)
- 1 cup olives (I use a combination of green and kalamata)
- 1/2 cup olive oil
- 1/2 cup pepperoncini
- 1/2 cup cherry tomatoes
- 1/2 cup artichokes
- 1/2 red onion
- 1/4 tsp garlic powder
- 1/4 tsp oregano
- 1/4 tsp thyme
- 1/4 tsp pepper
- 1/8 tsp salt
Instructions
- Pre-heat oven to 375 degrees.
- Prepare all vegetables- dicing potatoes, tomatoes and cutting up the onion.
- Place all vegetables and chicken thighs in a 9 x 13 casserole dish.
- Sprinkle with spices.
- Place in the oven for 25 minutes or until chicken and vegetables are cooked.
- Take out and drizzle olive oil over the top then serve.
Notes
- Make sure potatoes are cut up in small enough size that they will cook through in 25 minutes. About 1/2 inch in diameter should work well.
- Add feta cheese after taking out of the oven if not concerned about dairy.
