Dairy-Free Chicken Apple Sausage Breakfast Casserole

This lovely dairy free breakfast casserole is perfect to have with coffee on the weekends or is a great meal prep option to take on the go. Eggs, chicken apple sausage, broccoli with full fat coconut milk combined with herbs is easy, healthy and delicious.

From back in 2019, this recipe is one of my top posts on Instagram. It was called the three ingredient egg bake. I have since tweaked the recipe a bit to add a bit more flavor and gave it a new name so I hope you will enjoy.

This breakfast casserole is one of my favorite breakfast recipes to prep. It is loaded with healthy fats and protein to sustain you until lunchtime. The added herbs combined with the chicken apple sausage give this casserole and explosion of flavors. I am also a fan of these Bacon, Egg and Cheese muffins, Sausage and Veggie Egg Cups and Southwestern Frittata for prepped and ready to go breakfasts.

Ingredients you’ll need

  • Eggs
  • Chicken apple sausage
  • Broccoli florets
  • Coconut milk
  • Garlic powder
  • Onion powder
  • Salt
  • Pepper

How to Make

Prep oven to 350 degrees. Dice up sausage into 1 inch quarters, set aside.

Crack eggs into a large mixing bowl and blend together.

In the bowl with the eggs, combine the sausage, broccoli, coconut milk and spices together.

Pour into a 8×8 baking dish and put into the oven for 45 minutes.

Take out when egg is firm in center and edges are brown.

Substitutions

  • Sausage- you can use any type of sausage such as kielbasa, Italian sausage, chorizo, bratwurst or andouille.
  • Broccoli- you can sub for any type of vegetable that you have on hand- peppers, onions, zucchini, cauliflower. Have fun with it if broccoli is not your thing. Fresh or frozen broccoli will work fine for this recipe.
  • Milk- any dairy or non-dairy milk will work in this recipe.
  • Spices- you can add additional spices such as thyme, rosemary, sage or keep as is.

How do you know when it is done?

The egg will be firm in the center and the edges will start to brown.

Can this recipe be prepped ahead of time?

Yes, in fact that is what I do most of the time. You can make ahead and then freeze until ready to eat or you can combine all ingredients a day before. Place in a baking dish in the refrigerator until ready to bake.

What brand of chicken apple sausage is the best to use?

I really enjoy Aidell’s. They have super clean ingredients and are easily accessible. I get mine from Walmart.

What type of broccoli can I use?

I prefer using frozen broccoli florets but this recipe would work fine with fresh too.

Serving Suggestions

  • A side of fruit
  • A side salad
  • Enjoy with biscuits or slice of toast
  • Paired with Healthy Blueberry Oatmeal Bake for a hardy breakfast

Storage + Reheating

Refrigerator- place in a container with lid for up to 3 days.

Freezer- place in a freezer safe container or bag up to 3 months.

Reheating- place in microwave for 30-60 seconds or in a 350 degree oven until warm.

Ingredients

  • 12 eggs
  • 1 package chicken apple sausage
  • 2 cup broccoli
  • 1 cup full-fat coconut milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp pepper
  • 1/2 tsp salt

Instructions

  1. Pre- heat oven to 350 degrees.
  2. Dice up chicken apple sausage into 1 inch round circles, set aside.
  3. In a large mixing bowl, crack all eggs and whisk together.
  4. In the bowl with the eggs, combine the cut up sausage circles, broccoli, coconut milk and spices together.
  5. Pour all contents into an 8×8 baking dish and bake for 45 minutes.
  6. Take out when egg is firm in center and the edges are browned.
