Swamp potatoes are a rustic Louisiana inspired dish made by slow cooking potatoes with smoky sausage, onions and spices until they're melt in your mouth tender. The "swamp" nickname comes from the creamy, flavorful texture that develops as the potatoes break down, almost like a stew. The result is a rich, savory dish that's both filling and full of Cajun comfort.

One of the challenges with alot of tasty viral recipes is that they are not traditionally gluten free. This recipe uses onion soup mix and cajun seasoning which the well known commercial brands of these seasonings are not gluten free. I've made it my mission to modify and find alternatives to your favorites to make recipes gluten free. For this recipe, I am using Mama's Place Gluten Free Onion Soup Mix along with Slap Ya Mama which are certified gluten free.

INGREDIENTS + SUBSTITUTIONS

  • Sausage: I recommend using either Kielbasa, Andouille or even turkey sausage for the best flavors.
  • Potatoes: The star of swamp potatoes. Yukon Gold and Baby Reds hold there form and soak up all the delicious flavors well.
  • Yellow onions: Sweet and aromatic, these onions add depth of flavor and balance out the smokiness of the sausage.
  • Green beans: Adds the right amount of balance to the creamy potatoes and savory sausage.
  • Unsalted butter: Enhances all the flavors and absorbs into all the ingredients lending to such buttery flavor.
  • Cajun seasoning: Use Slap Ya Mama or your own homemade version to ensure gluten free. Many commercial cajun seasonings contain gluten so check your labels.
  • Garlic powder: Aromatic flavoring while enhancing the whole dish.
  • Chicken broth or water: Use either for extra moisture. I add in about ½ cup.

HOW TO MAKE CROCKPOT SWAMP POTATOES AND SAUSAGE

Step 1: Layer in the crockpot.

Step 2: Add the seasonings and butter

Step 3: Cook on low for 6-7 hours or high for 3 ½ to 4 hours. Stir then serve when ready.

EMILY'S TIPS

  • Use a smoked sausage or Andouille sausage for the best depth of flavor.
  • Slice potatoes evenly so they cook at the same rate.
  • Use Yukon Gold or Baby Red potatoes as Russett potatoes can disintegrate.
  • Check your labels with the seasonings. For the onion soup mix, I prefer to use a certified gluten free brand like Mama's Place Gluten Free Onion Soup Mix. Lipton's Gluten Free Onion Soup Mix and Dip Mix is not certified gluten free so be careful if you choose to use it.
  • For the Cajun seasoning, Slap Ya Mama is certified gluten free. While Tony Chachere's Creole seasoning is not certified gluten free and may use shared machines with wheat. Read your labels.
  • If you prefer more heat, add cayenne pepper or hot sauce to taste.

STORAGE

Refrigerate: Store any leftovers in an airtight container for up to 4 days.

Reheating: Reheat until warmed through on the stovetop or in the microwave with a splash of broth to loosen the sauce.

Freeze: Portion into freezer safe containers and thaw overnight before reheating. It will keep for up to 2 months.

Can I use a different sausage?

Sure! Turkey sausage, Kielbasa and Andouille all work well too.

Do I have to peel the potatoes?

No! It's totally optional and in fact, the skins add extra texture and nutrients.

Will this work with sweet potatoes?

Yes, the flavor will be slightly sweeter and less traditional but you can use these potatoes if you'd like.

What can I serve with this crockpot meal?

You can serve with your favorite gluten free cornbread, crusty bread, side salad or sauteed vegetables to make it even heartier.

What are the best gluten free seasonings to use?

Ingredients

  • 1 package of kielbasa sausage, sliced into thick rounds
  • 4-5 medium size Yukon Gold potatoes, peeled and cut into chunks
  • 1 yellow onion, sliced
  • 2 cups green beans
  • 1 stick unsalted butter
  • 2 tbsp packet Mama's Place Onion Soup Mix
  • 1-1 ½ teaspoon Cajun seasoning - Slap Ya Mama
  • 1 tsp garlic powder
  • ½ cup water or chicken broth (optional)

Instructions

  1. Spray crockpot with cooking spray or use a liner.
  2. Add in the potatoes and onions then layer in the kielbasa and green beans.
  3. Sprinkle in the onion soup mix, Cajun seasoning and garlic powder, top with the stick of butter. You can choose to add in water or chicken broth to create more of a swampy broth.
  4. Cover and cook on low for 6-7 hours or high for 3 ½-4 hours, until the potatoes are fork tender and everything is coated in buttery broth.
  5. Stir, adjust seasonings to taste then serve!
