    Creamy Cauliflower Gravy

    This creamy cauliflower gravy is the perfect topping to all your holiday meals. It is so delicious you won’t know it’s made from a vegetable.

    Confession time! I enjoy gravy but I like it thick. A lot of commercial gravy’s are watery, thin and frankly, don’t cut it for me. In addition, they are loaded with MSG and alot of other fillers that I don’t like. Not only is this recipe low carb, Whole 30 compliant and taste amazing but your food will be melting in it. So when creating this gravy, I knew it needed to be thick and creamy. The fact that it’s made from a vegetable should not be a turn off. Actually, the flavors from all the ingredients come together well and will have you coming back for more. Whether, your having a house full of people over to celebrate the holidays or your cooking for two, this creamy cauliflower gravy will be a favorite. I promise! Bonus, it is low carb and considered Whole 30.

    How to make

    First, take the head of a cauliflower and break the florets off. Place them in a pot of water and bring to a boil. You want to cook the florets down until they are completely soft. As they are cooking, melt the ghee in a stovetop pan or microwave for 15 seconds. Once the cauliflower is tender, drain the water. Add in the coconut milk, melted ghee and spices. Using an immersion blender, blend the mixture together. Top with additional black pepper. You should have a nice, warm, healthy, thick creamy gravy.

    Tips for making the best creamy cauliflower gravy

    • Make sure the cauliflower is very tender. You should be able to cut through the cauliflower floret with ease.
    • Using coconut milk or a dairy milk will give it more of a creamy consistency and actually contributes to the thickness verses using other milks or bone broth.
    • You can use additional melted ghee or melted butter to make it extra creamy.

    Ingredients

    Scale
    • 2 cups water
    • 1 large head of cauliflower (4–5 cups of florets)
    • 1 can coconut milk
    • 2 tbsp ghee (or butter)
    • 2 tsp thyme
    • 2 tsp rosemary
    • 1 tsp salt
    • 1 tsp pepper + 1 tsp to garnish

    Instructions

    1. Break the florets off the cauliflower head and place in water to boil.
    2. Once tender, drain water.
    3. Add coconut milk, ghee, and spices.
    4. Using an immersion blender, blend mixture together until thick and creamy.
    5. Top with extra black pepper and serve.

    Notes

    • Coconut milk or a dairy based milk work best for thickness.
    • You can substitute ghee for butter if you are not dairy free.
