This recipe is brought to you by one of my pregnancy cravings with Baby Z #3. I wanted a creamy dressing to put on all the things. Dairy is not agreeing with me this pregnancy so I needed an alternative that would still be creamy while also getting in my fats. Did I mention I love avocados?
I guarantee you will love the combinations of the avocados with lime juice and cilantro. All ingredients are super healthy plus the coconut milk for a smooth, creamy dressing. I’ve been enjoying adding to my salads, a topping for my morning eggs and even using it as a base when I make tuna salad. You’ll love this dressing as we go into springtime then summer for those outdoor bbq’s and picnics.
Ingredients
- Avocado
- Coconut milk
- Cilantro
- Lime juice
- Avocado oil
- Garlic clove
- Black pepper
- Salt

How to make
Place all ingredients in a food processor or blender. Process until mixture is combined and smooth. Let chill, then serve!

How long does the dressing last?
In the refrigerator, store in an airtight container for up to 1 week. I store mine in a mason jar with a sealed lid.
What do I do too not let the dressing turn brown?
You know when air hits anything avocado, it begins to oxidize. This is why guacamole turns brown. For this dressing, the acidity in the lime juice helps slow this process. Make sure to keep the dressing covered with a sealed lid.
If a little bit of oxidation happens it really should be a big deal. Just scrap the brown off the very top and the rest of the dressing should be good to enjoy.
How to choose the perfect avocado
I truly believe this is not only an art but also science. LOL! For the perfect avocado, you want to apply gentle pressure to it. If it is firm, then it is not ripe. If you can make an indention in the shell then it’s over ripe. But, if it yields to that slight pressure, it’s ripe and ready to enjoy!

- Avocados contain a variety of vitamins ranging from substantial amounts of vitamin C, E, K and B6. They also contain 15 grams of healthy fat and 9 grams of carbs with 7 being fiber based. That’s 27% of the daily recommended fiber value. Having trouble going to the bathroom? An avocado might help. 🙂
- Avocados have more potassium than bananas. Who knew, right? I always thought bananas were the go to if you were low in potassium. Guess not! One medium sized avocado contains 14 % of the daily value of potassium whereas, bananas are only 10 %. Getting the right amount of potassium can support healthy blood pressure.
- Healthy Cholesterol. Several studies have shown by eating several avocados a week that it helps reduce overall total cholesterol, lowers LDL and increases HDL (good) cholesterol. They also help reduce blood triglycerides.
- Antioxidant Power. Avocados contain lutein and zeaxanthin which are two powerful antioxidants. These antioxidants are shown to reduce the risk of macular degeneration and cataracts for eye health.

Ingredients
- 1 Avocado
- 1 garlic clove
- 1/2 cup cilantro
- 1/2 cup canned full fat coconut milk
- 2 tbsp avocado oil
- 1 1/2 tbsp lime juice
- Pinch of salt
- Pinch of pepper
Instructions
- Place all ingredients in food processor or blender.
- Blend until smooth and creamy.

- If wanting to make thinner, add a tablespoon or two of water.
