    CILANTRO-LIME CAULIFLOWER RICE

    This low carb, paleo friendly, side dish option is great to add to your weekly meal rotation. Fluffy and light you won’t even notice it is a vegetable.

    Up until a few years ago, I had never eaten cauliflower except raw and dipped in ranch dressing. I wasn’t too big of a fan then, hence, smothering it in ranch dressing. Now cauliflower rice is an absolute must at least 2 to 3 times a week in our house. Cauliflower by itself can be bland so I like to spice it up with cilantro and lime. The combination of flavors in this dish blend well together.

    How to make

    The first step is to decide if you are going to use a head of cauliflower or a bag of frozen already shredded cauliflower rice. If you are using a head of cauliflower, you will need to break it up and either shred it with grater or process it in a food processor. Once that is done, I like to saute it in a pan to get the excess water out. From here, I scoop out into a bowl. I chop up the cilantro and sprinkle on top. Lastly, I top with a freshly squeezed lime.

    Benefits of Cilantro

    There are several benefits to eating cilantro and adding it to cauliflower rice.

    Description

    Ingredients

    Scale
    • 1 medium head of cauliflower or 1 frozen bag of cauliflower rice
    • 1 bunch of cilantro
    • 1 lime (to juice)

    Instructions

    1. If using a head of cauliflower, break up into florets and process in food processor or with grater. If using a frozen bag, see step 2
    2. Place into a stove top pan and saute for 5 minutes or until the excess water from the “rice” appears evaporated
    3. Transfer cauliflower rice to bowl
    4. Finely chop cilantro and sprinkle onto cauliflower rice
    5. Squeeze fresh lime juice onto cauliflower rice
