I've never met a truffle that I didn't like. Love at first bite and I'm hooked. These chocolate raspberry cheesecake truffles are the absolute perfect combination of sweetness, delicacy and indulgence. They will literally melt in your mouth. Just imagine little mini bite size raspberry cheesecakes covered in chocolate. The raspberry mixed in with the cream cheese coated by a rich chocolate coating tastes like heaven on earth. These truffles can be made to enjoy as dessert anytime of the year or would be a fun addition to this Simple Valentine's Day Charcuterie Board.

CHOCOLATE RASPBERRY CHEESECAKE TRUFFLES
These chocolate raspberry cheesecake truffles are made with just 7 ingredients: cream cheese, fresh raspberries, coconut oil, sugar, coconut flour, vanilla and dark chocolate chips. The cream cheese is the base of the cheesecake filing and you absolutely want to use full-fat. Fresh raspberries are the best because they will hold up longer in the truffle. If you use frozen, there is a chance the extra moisture will effect the truffle. The vanilla enhances all the flavors. The coconut flour helps bind it all together. I'm using dark chocolate chips but you use whatever is your favorite type of chocolate. Milk chocolate and semi-sweet chocolate go just fine too. I just love the richness of the dark chocolate flavors.

INGREDIENTS

- Dark Chocolate Chips
- Raspberries, fresh
- Cream Cheese, room temp
- Coconut Oil
- Coconut Flour
- Sugar
- Vanilla Extract

HOW TO MAKE
Step 1: Add raspberries, cream cheese, sugar and vanilla to a food processor. Blend for 30 seconds.

Step 2: Add in coconut flour using small pulses. Scoop into a small bowl, cover and refrigerate for 15 minutes.

Step 3: Line a baking sheet with parchment paper. Using a small cookie scoop, scoop out balls and place onto the parchment paper. Place in the freezer for 2 hours or until fully frozen.

Step 4: In a microwave safe bowl, add chocolate chips and coconut oil. Microwave at 20-30 second increments until chocolate is melted after stirring.

Step 5: Remove frozen raspberry balls from the freezer and dip into the chocolate sauce. Coat the entire ball then use a fork to transfer back to the parchment paper. Return to the freezer until fully set.

SUBSTITUTIONS/VARIATIONS
- Nuts: You can add in finely chopped nuts to the cheesecake mixture or sprinkle over top the melted chocolate coating. Nuts are a great addition if you are planning on making these truffles keto friendly.
- Fruit: You can change out the fruits- blueberries, strawberries, or use jams instead. The jams will create a gooey center but very flavorful.
- Decorative Sprinkles: Christmas, Hanukkah, New Year's, Valentine's Day, St. Patrick's Day, 4th of July, whatever holiday you are celebrating you can use colored sprinkles to match to top the truffles.
- White Chocolate: Instead of dark chocolate, you could totally make these with white instead changing up the flavors.
- Cocoa powder: Add cocoa powder to the cream cheese mixture to make the centers have a chocolate taste. Chocolate on chocolate will surely make these very rich truffles.
- Dairy-Free: All you need to make these truffles dairy free is use a dairy free cream cheese such as Kitehill or Miyoko. You will also need to use dairy free chocolate chips such as Enjoy Life or Lily's. All my dairy free folks, you can absolutely enjoy truffles too!
EXPERT TIPS
- Food processor or high powered blender is the best to use for this recipe. This ensures everything will blend well together.
- Room temperature cream cheese will help the mixture come together smoothly and easily.
- Fresh raspberries are the best to use. This recipe has been tested with fresh raspberries only. You could use frozen, just be mindful of the extra water content that may affect the texture.
- Melting chocolate make sure to heat chocolate chips and coconut oil in a microwave safe bowl for 20-30 second increments, stirring between segments. If you don't have a microwave, you can melt stovetop using the double boiler method. Over medium heat, place pot with water filling the bottom. Then place your bowl of chocolate chips and coconut oil on top of that pot, stirring as it melts so the chocolate doesn't burn to the bowl.
- Truffle needs to be fully frozen before dipping in chocolate. You do not want a runny truffle so make sure it is fully set before you start dipping. Likewise, for the chocolate to set nicely, it needs to be frozen after dipping.
