This chicken and hummus bowl makes an excellent lunch or light dinner option. The creamy hummus topped with the Mediterranean chicken and vegetables drizzled in an olive oil based dressing makes the perfect meal. Can be modified to make paleo or Whole 30.

I have been in a lunch rut for sometime before creating this easy Mediterranean inspired chicken and hummus bowl. It comes together in under 25 minutes and super simple to meal prep ahead of time for lunches during the week.

This bowl is super versatile as you can mix and match different vegetables and even meats that you have on hand. It can even be made to accomodate a Whole 30.

Ok, now let's get to making your newest favorite lunch option.

INGREDIENTS YOU WILL NEED FOR BOWL

  • Chicken Tenders: Tenders are great since they cut up easily but you can also cut up thighs or breast meat into cubes if you don't have tenders on hand.
  • Hummus: You can buy a premade option or try making your own like this easy one here.
  • Red onion: Adds a tangy flavor to the bowl.
  • Cucumber: Adds a crispy crunch and blends well with the hummus.
  • Roma tomatoes: These small tomatoes are great to top the bowl with but you can easily use sliced tomatoes.
  • Olive oil: These help coat the tender chunks as they bake.
  • Spices: The chicken is coated in ground cumin, paprika and salt. You can add more additional spices if you desire. These spices blend well together to give it that Mediterranean flavor.

INGREDIENTS FOR THE DRESSING

  • Olive oil: This is the base for the dressing. I use regular olive oil NOT extra light olive oil.
  • Garlic powder: Another amazing spice in this recipe. I use the powder so you don't have to blend anything. Just shake or stir the dressing ingredients.
  • Juice of lemon: Adds the tangy taste to the dressing and brings out the flavors in the bowl.

HOW TO MAKE THIS BOWL

Step 1: Pre-heat broiler to 525 degrees F. Cut chicken tenders into small 1 inch pieces. In a bowl, add tenders, olive oil, and spices. Mix to combine.

Step 2: Place chicken on a foil lined baking sheet and bake.

Step 3: Make the dressing.

Step 4: Chop vegetables up.

Step 5: Assemble the bowl together with all ingredients and top with dressing.

WHY YOU'LL LOVE THIS RECIPE

  • Easy to Prep + Versatile: All these ingredients can be easily prepped ahead of time. The dressing can be prepared separately in another container to pour over bowl when ready. You can also swap out easily many of the ingredients to tailor to your needs and availability. See variation section of the post for ideas.
  • Great Lunch Option/Light Dinner: This bowl makes the perfect lunch especially if you have been like me in a rut. It's absolutely delicious and goes well with pita chips, crackers or a sandwich. I enjoy it with these Simple Mills pita crackers. It's also great if your looking for a lighter dinner option.
  • Flavorful: I know I've said it before in this post about the flavors but the flavors of this bowl are magical. Ok, maybe not magical but definitely up there in terms of satisfaction. The spices combined with the chicken, veggies and hummus will explode in your mouth.

VARIATIONS

  • Paleo/Whole 30: Yes, this bowl can be made Paleo and or Whole 30. The only ingredient that needs to be swapped out is the hummus. Chickpeas are a legume therefore, not Whole 30 or Paleo compliant. You can try this Mediterranean Cauliflower Hummus or this Sweet Potato Hummus. Both of these recipes are Whole 30 and Paleo compliant hummus.
  • Protein: Maybe you don't have chicken on hand. No worries. You can use tofu, any ground meat, boiled eggs, meatballs or shrimp in place.
  • Vegetables: So easy to swap out or add in mushrooms, avocado, spiralized zucchini, sun-dried tomatoes or olives.
  • Cheeses: Feta or parmesan cheese can be a great topping.
  • Grains: Need to bulk it up a bit? White rice, brown rice, quinoa, cauliflower rice or gluten free orzo are great ways to add a little extra to this bowl.

FREQUENTLY ASKED QUESTIONS

1.) What is hummus? Hummus is a Middle Eastern based dip. It is traditionally made with chickpeas, tahini and lemon juice.

2.) Can I use any type of hummus? Yes, while hummus is traditionally made with chickpeas. You can use a cauliflower or sweet potato variation.

3.) Can I make this chicken and hummus bowl ahead of time? Yes, you can prep and cook the chicken ahead of time as well as chopping all the vegetables up. Set these in airtight containers in the refrigerator until your ready to assemble the bowls. You can also make the dressing beforehand, just pour over bowl when ready to eat.

4.) Is this Mediterranean inspired bowl healthy? Yes, all the ingredients in this bowl are real food, wholesome ingredients. While healthy has a different definition for everyone, I'd say this bowl has a combination of carbs, proteins and healthy fats all which are healthy for the human body.

HOW TO STORE

Refrigerator: All ingredients for this bowl can be stored in an airtight container in the refrigerator. I'd advise to place vegetables in a separate container than the chicken so they don't get soggy. Also, make the dressing separate as well and keep in an airtight container or jar.

For the bowl:

  • 1 lb chicken tenders
  • 2 tbsp olive oil
  • ¾ tsp ground cumin
  • 1 tsp paprika
  • ¼ tsp salt
  • ½ small red onion (sliced)
  • 1-2 cucumbers (diced)
  • 2-3 roma tomatoes (sliced)
  • 1 container premade hummus (or your own)
  •  
  • For the dressing:
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • Juice of 1 lemon

Instructions

  1. Pre-heat the broiler to 525 degrees F.
  2. Cut tenders into small 1 inch pieces.
  3. In a bowl add tenders, olive oil, cumin, salt and paprika. Mix to combine.
  4. Place chicken on a foil lined baking sheet and cook for 10 minutes.
  5. Make the dressing. Mix olive oil, lemon juice and garlic powder in a small bowl and whisk to combine.
  6. Chop the cucumbers, tomatoes and red onions.
  7. To assemble the bowl, place the desired amount of hummus on the bottom. Top with chicken, veggies and drizzle with dressing.

Notes

  • When assembling the bowls, use 2-3 tablespoon of hummus for each bowl.
  • Use premade hummus or make your own.
