As I head into my 9th year of sobriety, I'm still a fan of fruity drinks just minus the alcohol. Summer gatherings, beach vacations, backyard barbecues and relaxing evenings on the porch all feel a little more festive when there's a special drink in hand. This Pina Colada Mocktail has become one of my absolute favorites because it captures everything I love about the original while keeping it alcohol free.

If you've never had a pina colada before, think of it as a tropical vacation in a glass. This mocktail is creamy, icy, sweet and bursting with pineapple flavor. The coconut adds a rich velvety texture while the pineapple juice brings bright, sweetness that tastes incredibly refreshing on a hot day.

EMILY'S TIPS FOR THE BEST MOCKTAIL

  • Chill your ingredients first. Cold pineapple juice and even the coconut cream helps create a frostier texture and prevents the ice from melting too quickly.
  • Use full fat coconut cream. The full fat version is the best for maximum creaminess.
  • Blend in stages. Start with the liquids before adding the ice to help your blender work more efficiently.
  • Adjust the thickness and sweetness. Add more ice for a frozen drink or a splash of pineapple juice if you prefer a thinner consistency. For sweetness, add more or less coconut cream.
  • Serve immediately. Frozen mocktails are always at the creamiest right after blending.

STORAGE INSTRUCTIONS FOR BIG BATCHES

If your making this Pina Colada mocktail for a party, blend the pineapple juice and coconut cream ahead of time and store in an airtight pitcher in the refrigerator for up to 24 hours.

When ready to serve, give the mixture a good stir and blend it again with fresh ice to restore the frozen texture. If the mixture separates while chilling, that's completely normal just simply stir or shake before blending.

For larger gatherings, you can also freeze the blended mixture in a freezer safe container. Allow it to thaw slightly before re-blending to achieve the perfect slushy consistency.
